Friday Food Round-Up!

This week brought to you by the side vegetable, spinach. I also made a batch of chili in the slow cooker on Sunday so we would have a few extra lunches!

Friday – Spicy Chicken and Chips from Farmhouse Rules with Garlicky Wilted Spinach

Haven’t made this recipe in AGES. It is a good one.

Tuesday – Spice Rubbed Parmesan Chicken Breasts and Buffalo Smashies from Cravings: Hungry for More, Garlicky Wilted Spinach

I tried marinating the chicken this time instead of just topping it with the spice rub/paste and it turned out pretty good that way.

Wednesday – Black Bean and Mushroom Enchilada Casserole from Cravings: Hungry for More

So tasty, but I think we probably should have just ordered a pizza to make Halloween a bit easier.

Thursday – Braised Short Ribs with Sweet Potato Mash from Cravings: Hungry for More, Garlicky Wilted Spinach

Once again I made this in the crockpot with a chuck roast. YOLO.

Miscellaneous – Autumn “Dates” Night Bread from Farmhouse Rules

I made these with Critter. It is supposed to be a loaf but muffins were just faster.

Friday Food Round-Up!

Marcus went on a business trip this week and didn’t get home until Thursday so I lived off the land. AKA on leftovers and on salad kits and on leftover pizza.

Did you know that this meal makes a ton of leftovers? Because this is what I ate all week.

I made a slow cooker full of minestrone on Sunday so that we would have a few lunches each and that was a great life choice.

Tuesday – Crispy Skinned Chicken with Lemon Rosemary Pan Sauce from Cravings: Hungry for More, Garlicky Wilted Spinach, Roasted Potatoes

This chicken was AMAZING. Will make again.

Wednesday – Salmon, Veggie Couscous with Spicy Pine Nuts from Cravings: Hungry for More

The couscous was tasty but it required three dishes so it probably will not become part of the regular rotation.

Thursday – Coconut Short Rib Curry from Cravings: Hungry for More, Steamed Rice, Steamed Broccoli

Honesty: I made this in the slow cooker with a chuck roast.

Miscellaneous – Twitter (and Uncle Mike’s) Banana Bread from Cravings: Hungry for More

I made this with a can of pumpkin instead of banana because Mom is allergic and it still came out great. I also subbed half of the white sugar for brown. ALWAYS do this with quick breads. It is a great choice. Will make again soon.

I had to eat more buffalo potatoes because they are amazing. The chicken was great. I love that Chrissy suggested serving this with garlicky wilted spinach but I followed my own recipe instead of hers and called it a day.

Friday Food Round-Up!

Welcome to Cravings: Hungry for More spirit week.  Actually it will be spirit weeks because I have a list of recipes we need to try ASAP and then I will dive in and see what else we missed that I want to try!

Sunday – Parmesan Minestrone with Chili Mayo Toasts from Cravings: Hungry for More

Things that are true: (1) I added italian chicken sausage for some extra protein. (2) Because they were out of said sausage at ALDI we ended up getting at the farmers’ market which was totally fine but also cost $10.00 which was…a bit fancy for the meal we were making bit also it was delicious and we got to support a local farmer hooray!  (3) I made this in a slow cooker because basically all soups can be and that made my day easier. (4) This meal made us 7-8 servings which means we got dinner, leftovers, and extra soup for the freezer.

Monday – Pork Larb from Cravings: Hungry for More with Steamed Rice, Cabbage

I made this with beef instead of pork and it was great and 11/10 will make again easy weeknight meal that we both enjoyed.

Wednesday – Slow Cooker BBQ Chicken with Jalapeno Cheddar Corn Pudding from Cravings: Hungry for More, Tots, Salad

Verdict on the corn pudding: Makes a ton, would be fabulous for Thanksgiving or a dinner party with more than four people.

Miscellaneous – Pumpkin Dessert

I made this for our work potluck.  I baked it with Critter.  He’s a good helper.

We cooked so much this week and I really need to get our kitchen into gear for some batch cooking because I need to get more meals out the door.

Saturday – Turkey Tacos

I made this so we could eat it throughout the week. I haven’t made it in FOREVER so it was a tasty treat.

Tuesday – 90s Taco Salad

I thought we should at least try to eat some lettuce this week.

Wednesday – Tuna Melts, Tots

I had a packed night so Marcus made this dinner!

Thursday – Stuffed Cabbage Without The Roll from Farmhouse Rules

I made a double batch of this in the crockpot so we could freeze some meals.

Friday Food Round-Up!

I put the slow cooker to work this week. I made chicken enchilada soup for a family friend (THE MEAL TRAIN NEVER ENDS Y’ALL) and a double batch of chili for the freezer.

I am getting ready for fall. And batch cooking so that once a week we can eat dinner at home without cooking. What joy.

Friday – Chili Lime Chicken Burgers from Trader Joe’s, Roasted Potatoes, Garlic Green Beans, Grilled Zucchini, Corn

Feast.

Saturday – Grilled Salmon, Dijon Potatoes, Green Beans, Corn

Pro-tip: put some butter on your salmon before you cook it. Like one tablespoon total.

I will also say these dijon potatoes are just the best.

Monday – BBQ Chicken, Three Bean Salad, Roasted Potatoes, Corn

What recommends this meal: When eating leftovers, Critter likes eating the kidney and garbanzo beans, Glitter likes the chicken

Wednesday – Salsa Chicken Tacos

I wasn’t actually supposed to be home for this dinner but I made this chicken on Tuesday so Marcus would have something to eat and then it was for both of us.

Miscellaneous – Pizza Braid

Critter and I baked this together of course.
