Shoutout to everyone who shared a recipe in my Facebook comments or sent me them directly. I have listed and linked all of the recipes here so that we can all try something new in the next few weeks! If you wrote out a recipe by hand, I tried to find a comparable match online (and I think I did pretty well!).

Our dishwasher is broken so if you could lift us up in prayer that would be great.
I also did a few really efficient things this week. Like making a meal for a new mama. Batch cooking some meals for us. Making slow cooker meals on Tuesday and Thursday when we already had other plans so they would be easy work night dinners instead.
Finally, friends shared A TON of meal ideas so I will be working on a post that captures all of them.
Saturday – Nachos, Salad
Honestly, this was a dinner of leftovers.
Sunday – Tamale Pie, Salad
I actually made three tamale pies – and then froze two of them. I cooked the chicken by tossing it into the slow cooker and shredding. I used actual eggs and whole milk and then mixed some beans with the chicken to top (about 1/3 can drained and rinsed per dish).
Monday – Pasta with Meatballs a la Billy and Trader Joe’s Tomato Basil Sauce, Salad
About five months ago Billy told me he made meatballs simply by balling up Italian sausage. Is that not evil genius? We tried it and friends it was life changing.
Feast! No seriously, I needed at least two meals each of leftovers from this.
Miscellaneous – Chocolate Chip Banana Muffins
Critter helped me to bake these. I split the batch and gave half of them to Marcus’ grandparents.
If anyone has any favorite (EASY) recipes, please share in the comments. I feel like we have really gotten into a groove but monotony could come quickly.
Friday – Hawaiian Sliders, Salad
Easy Friday night dinner for sure.
Sunday – Tuna Melts, Salad
This was actually lunch, and I am officially a proficient tuna salad maker.
Monday – Baked Potatoes with Turkey Chili, Salad
I doubled the batch of chili so we could look forward to four more easy baked potato dinners.
Wednesday – Easy Slow Cooker Yellow Coconut Curry Chicken, Steamed Rice, Steamed Broccoli
This is SUCH an easy winner. I tossed a half bag of frozen peas in because they were there.
Thursday – Easy Crockpot Creamy Chicken Enchilada Chili, Salad, Corn Muffins
I love that this meal always gives us dinner, leftovers, and a meal or two for the freezer.
This week I assembled yet another crockpot meal while both children were awake and busy. Witness my transformation into at least a mediocre mom of two!
Friday – Roasted Garlic Chicken Sausage with Sweet Potatoes Sheet Pan Dinner, Wilted Spinach
Sunday – Simple, Perfect Chili from The Pioneer Woman Cooks, Cheesy Jalapeno Bacon Cornbread from Cravings
I made a double batch of this chili because Marcus had a Poker Night on Thursday. I froze the Poker Night batch (so it would stay fresh!). And I don’t cook two dinners so we had chili for dinner on this night as well.
Tuesday – Slow Cooker Lasagna Soup from Skinny Taste Fast and Slow, Salad
I like this soup but I LOVE the ricotta-parsley-parmesan mixture. I should really just make the ricotta arrangement.
Wednesday – Beef Ragu over Penne with Salad

Thursday – Chili Cheese Tots
This is poker night food, no?
Last week we lived out of our freezer, this week I cooked for us and sent some meals to mamas who needed them!
Sunday – Slow Cooker Italian Sausage, Escarole, and White Bean Soup from Skinny Taste Fast and Slow, Challah
It’s officially a favorite.
Monday – Tuna Melts, Tater Tots, Salad
This was a perfect snow day meal.
Wednesday – Slow Cooker Vegetable Yellow Split Pea Soup from Skinny Taste Fast and Slow, Salad
So there is this thing where my crockpot hates lentils and split peas. So this meal took like 11 hours to cook. I actually made it on Tuesday (and we ended up eating frozen pizza that night because disaster)so this meal became food for the rest of the week instead.
I had a total crockpot fail this week (God clearly did not want us eating lentils!) so I made some Chicken Enchilada Quinoa Soup to make sure it still worked (it does) and to give us some freezer meals/lunches. Otherwise, we cooked/ate a lot of food and It Was Good and I go back to work next week and you guys I really don’t know what we are going to eat so YOLO.
Sunday – Slow Cooker Lasagna Soup from Skinny Taste Fast and Slow
I still love this soup.
Monday – Simple, Perfect Chili from The Pioneer Woman Cooks, Cheesy Jalapeno
Bacon Cornbread from Cravings
We had Marcus’ high school friends and their kids over to watch the Christmas light show in our neighborhood. We had chili and cornbread for the adults and then chicken nuggets and tater tots for the kids.
Tuesday – Cheese Pizza with Turkey Pepperoni, Salad
This freezer pizza saved us from our failure of a crockpot meal for dinner. Amen.
Miscellaneous – Ranch Pretzels
There is a reason I have never made these in my own home before. They are addictive.
