What to say about this week. It is still snowing? February is a weirdly busy month? I made a few meals for new mama friends this week so the crockpot is still hard at work people.
Saturday – One Skillet Steak and Spring Veg with Spicy Mustard, Roasted Potatoes
This recipe really is such a gem. Try it if you haven’t.
Monday – Turkey Tacos
Like everything happening with the snow these days, this meal ended up being dinner x2.
Thursday – Black Bean and Mushroom Enchilada Casserole from Cravings: Hungry for More
If I was more well organized I would have made something different for Valentine’s Day dinner but this was still a good meal.
Frankly, this was a week I was supposed to be living off of salad kits. Thanks to weather and a lot of different schedule changes related to that, I cooked more. And we ate some weird combinations of things. Real talk.
Monday – Chile Lime Chicken Burgers, Crispy Buffalo Smashies from Cravings: Hungry for More, Favorite Three Bean Salad
I found these burgers in the freezer so it was time to make them.
Tuesday – Tuna Melts, Roasted Cauliflower and Quinoa Salad
Was actually planning to make this salad (roasted some chickpeas too!). Ended up making a weird dinner combo.
Thursday – Perfect Instant Ramen, Salad
Again, wasn’t planning to cook.
We were trapped in our house this week so we cooked. A lot. I also did a ton of baking with Critter that is unpictured. Oddly buying an extra bunch of green onions at the store has been the secret to our success lately when it comes to improvising/adding meals.
Friday – Harissa Salmon Salad
Sunday – Chipotle-Honey Chicken with Mango Avocado Salsa from Cravings, Sweet and Salty Banana Rice from Cravings: Hungry for More, Steamed Broccoli
The banana rice (which is basically a banana fried rice) is wild.
Monday – 90’s Taco Salad
Yum. Eating the chips while I make this is also great.
Tuesday – Kimchi Fried Rice, Steamed Broccoli
We haven’t made this recipe in like two years. Oops.
Pork Turkey Larb from Cravings: Hungry for More
These lettuce wraps are not photogenic. Full stop.
Thursday – Sesame Peanut Noodles from Cravings, Garlicky Wilted Spinach
We had all of the ingredients so this was our “bonus” dinner of the week.
Something we overlooked last week – it was like the 400th Friday Food Round-Up! That’s something.
We didn’t cook a lot this week because we were on vacation. But here we are.
Wednesday – Chicken Sausages, Garlicky Wilted Spinach, Crispy Buffalo Smashies from Cravings: Hungry for More
Thursday – Lime Pickle Roasted Chicken with Roasted Potatoes and Watercress Spinach
This was actually supposed to be a crockpot meal but I thawed bone-in instead of boneless chicken thighs so I needed a new plan and we had everything for this delightful dinner.
We are keeping the variety alive at our house!
Friday – Harissa Salmon over Spinach
I had a salad like this a few weeks ago at a restaurant and had to recreate it. Marcus RAVED about the salmon so I will write up a recipe when I have the chance!
Sunday – Tomato and Gigante Bean Bake from Smitten Kitchen Every Day, Baguette
This is officially a fave.
Monday – Lime-Pickle Roasted Chicken with Potatoes and Watercress Spinach
This recipe has been in my binder since March 2017 untouched. I’m glad I saved it. Marcus got the lime pickle at the Indian grocery down the street. We both loved the meal and Critter loved the chicken.
Wednesday – Coconut Beef Curry, Steamed Rice, Steamed Cauliflower
I did this in the crockpot on Tuesday, we ate it on Wednesday.
We liked it fine, Critter enjoyed it some, Glitter ate TONS so will make again.
This week I revived our recipe binder. I also cleaned it out and purged the recipes we never made at all or made once but did not love.
Sunday – Pan Roasted Chicken with Harissa Chickpeas, Roasted Cauliflower
An old favorite is back.
Tuesday – Slow Cooker Chicken Tacos
This time instead of using salsa I just dumped in a packet of taco seasoning.
Thursday – Braised Chicken Thighs with Indian Flavors, Steamed Broccoli, Steamed Rice
I made this in the crockpot instead of in the oven and that was a great choice.
First meals of 2019, people.
Saturday – Sizzling Beef Bulgogi Tacos from Smitten Kitchen Every Day
I made these when Marcus was sick because the meat was already thawing. It turns out that this recipe made a lot of food which was good because then I didn’t have to cook for us once I got sick.
Monday – Perfect Instant Ramen
This was my sick day lunch.
Monday – Game Hens with Everything Seasoning, Roasted Tiny Potatoes Garlicky Wilted Spinach
My fever broke so I was able to make our New Year’s Eve dinner.
Tuesday – Tomato Glazed Meatloaves with Brown Butter Mashed Potatoes from Smitten Kitchen, Garlicky Wilted Spinach
I just looked at the blog. I have not made this meal in two years. Probably because it takes a full hour of active work. It is always just the best though.

Banana Pumpkin Bread from Cravings: Hungry for More
I have only ever made this with pumpkin, it is still great. Since it makes two loaves we gifted one to the woman who works at the front desk at our synagogue. Critter LOVES her and he was so excited to bring her a treat!
