I made this in a slow cooker instead because it made more sense for our life and it turned out great.
Wednesday – Spice Rubbed Parmesan Chicken Breasts and Crispy Buffalo Smashies from Cravings: Hungry for More, Garlicky Wilted Spinach
I had to eat more buffalo potatoes because they are amazing. The chicken was great. I love that Chrissy suggested serving this with garlicky wilted spinach but I followed my own recipe instead of hers and called it a day.

Sunday – Black Bean and Mushroom Enchilada Casserole from Cravings: Hungry for More
Instead of making a tomatillo sauce, I used green enchilada sauce. It was still great.
Tuesday – Cheesy Polenta with Mushrooms from Cravings: Hungry for More, Garlicky Wilted Spinach
In this dish I used some smoked butter I brought home from our trip to Michigan and this was The Best Venue to showcase this.
Wednesday – Simple Skillet Broken Lasagna from Cravings: Hungry for More, Salad
This may be the first time I have ever made an actual lasagna and I loved it.
Instead of making tomato sauce I doctored up two cans of Trader Joe’s marinara sauce (green can) with a sauteed onion, fennel and red pepper flakes.
Thursday – Turkey Tacos
Welcome to Cravings: Hungry for More spirit week. Actually it will be spirit weeks because I have a list of recipes we need to try ASAP and then I will dive in and see what else we missed that I want to try!
Sunday – Parmesan Minestrone with Chili Mayo Toasts from Cravings: Hungry for More
Things that are true: (1) I added italian chicken sausage for some extra protein. (2) Because they were out of said sausage at ALDI we ended up getting at the farmers’ market which was totally fine but also cost $10.00 which was…a bit fancy for the meal we were making bit also it was delicious and we got to support a local farmer hooray! (3) I made this in a slow cooker because basically all soups can be and that made my day easier. (4) This meal made us 7-8 servings which means we got dinner, leftovers, and extra soup for the freezer.
Pork Larb from Cravings: Hungry for More with Steamed Rice, Cabbage
I made this with beef instead of pork and it was great and 11/10 will make again easy weeknight meal that we both enjoyed.
Wednesday – Slow Cooker BBQ Chicken with Jalapeno Cheddar Corn Pudding from Cravings: Hungry for More, Tots, Salad
Verdict on the corn pudding: Makes a ton, would be fabulous for Thanksgiving or a dinner party with more than four people.
Miscellaneous – Pumpkin Dessert
I made this for our work potluck. I baked it with Critter. He’s a good helper.
I felt like I cooked a lot this week? That may also be due to the fact that I put more soup into the freezer and hosted the Yom Kippur Break Fast (which was mostly other people bringing food. Anyway, who knows.

We really need to work these into our regular rotation. I would also like to share that I fried eggs in coconut oil for the first time.
It’s Saturday, I know but this is just the best we are going to be able to do today.
Even with Rosh Hashanah (I made roasted asparagus) we cooked just a ton. I am trying to get us back into a routine this week of one easy meal per week (like sandwiches) and another from the freezer.

I made this for a wine night I was hosting and it will definitely be a new go-to dessert.
We cooked so much this week and I really need to get our kitchen into gear for some batch cooking because I need to get more meals out the door.

Thursday – Stuffed Cabbage Without The Roll from Farmhouse Rules
I made a double batch of this in the crockpot so we could freeze some meals.
There are weeks where we have cooked more but there have also been weeks where we have cooked way less.
Especially since I was gone on a girls’ trip last weekend and then we went straight up to Duluth.
Monday – Baked Salmon with Corn, Asparagus and Dijon Potatoes
We actually made this while we were in Duluth. I was responsible for actually making the potatoes but otherwise Marcus planned and organized every part of this meal!
Thursday – BBQ Chicken with Corn, Green Beans and Roasted Potatoes
Summer is winding down and I am one half tired of eating this same dinner and one half really sad because I would like to have warmth forever.
