There’s a pizza place in Dinkytown called Mesa Pizza. They make this lovely Mexican-pizza that’s got black beans, avocados, and some sort of spicy sauce that I have yet to be able to re-create. But it’s just fantastic to eat, for dinner, for drunk munchies, or as a hangover cure.
Ingredients
- 1 par-baked pizza crust (use the cilantro-garlic modification!)
- 1 recipe of black beans
- 2 huge handfuls of shredded mozzarella (or cheddar!) cheese
- 2 avocados, cubed or sliced
- 1 bell pepper, sliced thinly and quartered
Instructions
- Preheat oven to 400 degrees (If you’ve just made your crust, it should already be there)
- Spread black beans on pizza crust
- Evenly distribute avocado, and top with cheese. Since there’s already so much going-on here, the cheese is really meant to add flavor and bind it all-together
- Take your pepper slices (really, they’re more like bits at this point) and spread over the top of the pizza. We put the peppers on the very top so that they’ll be able to cook easily. Don’t pre-cook them to soften them up before baking, they’re meant to add a bit of crisp in contrast to the beans and avocado
- Place in the oven for 20 minutes or until cheese is bubbly/golden brown
- Serve with sour cream (you could add chili powder for some zing) and salsa
