Coming back from Chicago and rolling into Thanksgiving (and Marcus’ surgery!), I set pretty low expectations and planned to mostly make stuff from our freezer. And some salad kits that we had to throw out and replace with spinach. THANKS ROMAINE. I did actually cook twice this week. Look.

Thursday – Bread Pudding with Whiskey Sauce
Classic holiday food.
TGIF. This week I finally got it together to spend two minutes making homemade salad dressing so we are back on that train and it tastes so good.
Saturday – Baked Salmon with Roasted Cauliflower and Roasted Potatoes
We topped the salmon with some smoked butter from Boss Mouse Cheese and this is THE WAY my friends. I think we also had a salad with this but I forgot to take a picture?!
Sunday – Chipotle-Honey Chicken with Mango-Avocado Salsa from Cravings and Texas Sweet Onion Casserole with Chipotle, Rice and Gruyere, Salad
New recipe from old Cravings! I have never made a mango salsa before and I doubled the chipotle marinade and froze it because this might be the first time I have used my immersion blender in a year. Also a regular reminder that this rice casserole is such a fave.
Monday – Grilled Turkey Avocado Cheese Sandwiches, Salad, Chips
Tuesday – Turkey Tacos
Make these little corn tacos. And then eat them x2.
Honestly, I don’t know how we ended up cooking so little this week. And yet there was so much food in our house? A mystery.
I also took some time to bake cookies with Critter on Tuesday and froze a few logs of cookie dough so I am looking forward to working my way through those.
Monday – Sesame Chicken Noodles from Cravings, Steamed Broccoli
As always, I made this with peanut butter instead of tahini.
Wednesday – Tuna Melts, Tots, Salad
I finally got the motivation to make salad dressing this week and that was a great life choice.
This week brought to you by the side vegetable, spinach. I also made a batch of chili in the slow cooker on Sunday so we would have a few extra lunches!
Friday – Spicy Chicken and Chips from Farmhouse Rules with Garlicky Wilted Spinach
Haven’t made this recipe in AGES. It is a good one.
Tuesday – Spice Rubbed Parmesan Chicken Breasts and Buffalo Smashies from Cravings: Hungry for More, Garlicky Wilted Spinach
I tried marinating the chicken this time instead of just topping it with the spice rub/paste and it turned out pretty good that way.
Wednesday – Black Bean and Mushroom Enchilada Casserole from Cravings: Hungry for More
So tasty, but I think we probably should have just ordered a pizza to make Halloween a bit easier.
Thursday – Braised Short Ribs with Sweet Potato Mash from Cravings: Hungry for More, Garlicky Wilted Spinach
Once again I made this in the crockpot with a chuck roast. YOLO.

I made these with Critter. It is supposed to be a loaf but muffins were just faster.
Marcus went on a business trip this week and didn’t get home until Thursday so I lived off the land. AKA on leftovers and on salad kits and on leftover pizza.

I made a slow cooker full of minestrone on Sunday so that we would have a few lunches each and that was a great life choice.

The couscous was tasty but it required three dishes so it probably will not become part of the regular rotation.

I made this with a can of pumpkin instead of banana because Mom is allergic and it still came out great. I also subbed half of the white sugar for brown. ALWAYS do this with quick breads. It is a great choice. Will make again soon.

I had to eat more buffalo potatoes because they are amazing. The chicken was great. I love that Chrissy suggested serving this with garlicky wilted spinach but I followed my own recipe instead of hers and called it a day.
