Friday Food Round-Up!

There are weeks where we have cooked more but there have also been weeks where we have cooked way less.

Especially since I was gone on a girls’ trip last weekend and then we went straight up to Duluth.

Monday – Baked Salmon with Corn, Asparagus and Dijon Potatoes

We actually made this while we were in Duluth. I was responsible for actually making the potatoes but otherwise Marcus planned and organized every part of this meal!

Thursday – BBQ Chicken with Corn, Green Beans and Roasted Potatoes

Summer is winding down and I am one half tired of eating this same dinner and one half really sad because I would like to have warmth forever.

Some Things

Today, a photo of the sunset from Camp Lake, where I spent the weekend with my sorority sisters. We spent a lot of time on the water, ate a lot of cheese and drank some drinks. It was just so good.

Critter has the week off from daycare so today we’re actually headed up to Duluth with my in-laws to enjoy a little family time. Yes friends, I am getting so much lake time right now and it is GLORIOUS.

I will turn 31 on Tuesday. Glitter was 11 months old on Saturday.

TIME SLOW DOWN.

Our lives are pretty much on pause until we get home on Wednesday.

Friday Food Round-Up!

I put the slow cooker to work this week. I made chicken enchilada soup for a family friend (THE MEAL TRAIN NEVER ENDS Y’ALL) and a double batch of chili for the freezer.

I am getting ready for fall. And batch cooking so that once a week we can eat dinner at home without cooking. What joy.

Friday – Chili Lime Chicken Burgers from Trader Joe’s, Roasted Potatoes, Garlic Green Beans, Grilled Zucchini, Corn

Feast.

Saturday – Grilled Salmon, Dijon Potatoes, Green Beans, Corn

Pro-tip: put some butter on your salmon before you cook it. Like one tablespoon total.

I will also say these dijon potatoes are just the best.

Monday – BBQ Chicken, Three Bean Salad, Roasted Potatoes, Corn

What recommends this meal: When eating leftovers, Critter likes eating the kidney and garbanzo beans, Glitter likes the chicken

Wednesday – Salsa Chicken Tacos

I wasn’t actually supposed to be home for this dinner but I made this chicken on Tuesday so Marcus would have something to eat and then it was for both of us.

Miscellaneous – Pizza Braid

Critter and I baked this together of course.

Some Things

I actually had another lake pic queued up and ready to go. Then Ang and I rolled to Minnehaha Falls on Sunday after lunch and…this is better. Right?

Honestly one of the sparkiest little points of my weekend was knowing that this post encouraged an old friend to also read a book because that is what we are all doing now. Reading books and drinking coffee.

I would also like to note that in some episode of the Forever 35 podcast (I think it was this one but I’m not sure), something I heard that really stuck with me was the concept of organization as self-care. Being physically organized in your space. Being financially organized. All of this is self-care! I think this is especially resonant with me right now because we are finally taking care of some different things (AKA the kitchen table) that are just allowing everything in our lives to feel more…settled? We also realized that we possessed enough empty cardboard boxes from all sorts of different things that it warranted a designated trip to the city’s recycling center. Our house is probably 20-30 pounds of cardboard lighter now.

For us there really is no big transition from end of summer to fall, only because Critter will continue at the same “school” he has been attending and Glitter will not start until January. Critter is signed up for tot soccer this fall, for a family extra-curricular we’ll all take a daytime music class. Until then we just have a wildly busy two weeks that include a girls’ weekend for me and then a family trip with Marcus’ parents to Duluth that we are looking forward to.

5:00 AM

After night-weaning Glitter I finally slept. I never looked back.

After weaning-weaning Glitter I finally felt like I had ENERGY again.

Which was great. I had so much energy that when I hopped into bed at 9:30 PM, I didn’t fall asleep until 10:30 PM. Enter: lots of pointless pre-bedtime internet surfing on my phone.

I am not a night person. I really really really am a morning person. Marcus is a morning person. Our kids are morning people. It is rare that at least one of them is not up and running at 6:00 AM. There is no actual such thing as sleeping in at our house.

When Marcus is on a business trip, I wake up at 5:00 AM every day so that I have enough time to get myself and our lives in order for the day.  I realized after his most recent trip, now that I am not pumping anymore, that is a quiet, quiet, time.

So a few weeks ago I started thinking about what it would look like if I were to wake up at 5:00 AM to start my day a little earlier and carve out that extra piece of time I have just been DYING for over the past few years of pure exhaustion and time scarcity.  What would I even do with it?

It’s not quite enough time to exercise (which would allow me to not stuff a post-bedtime workout in at 6:45 PM alas), but it is more than enough time to sit and enjoy a few cups of coffee and eat breakfast in peace.  So I  went with Books.  I am reading books.  I am not journaling to self-actualize, I am not being a #girlboss or working on a side-hustle.  I am just reading books.

Oh, and the very first morning I realized I had nothing to eat for lunch so I took some of that precious time and made a tuna salad.

I don’t get this quiet time every day, on Mondays and Wednesdays I have to get ready for work and keep everyone in the family moving.  On the other mornings, it has been pretty great.

Friday Food Round-Up!

A brief summary of this week would be that our fridge was LOADED with leftovers. It was great.

Sunday – French Toast Casserole

I made this for a neighbor’s potluck and it was like a lazy bread pudding. I WILL make this again.

Sunday – Trader Joe’s Falafels, Tabbouleh, Corn

I think the falafels were better the second day? The first night they tasted dry.

Monday – Pasta Salad, Salad

I just threw a bunch of things together here.

Tuesday – Tacos, Pinto Beans, Cilantro Lime Rice

Adam and Whitney joined us for dinner. I made the beans using the same basic recipe as the black beans except for with pinto beans.

Some Things

Can you tell we spend a lot of time by the water in the summer?

This is from Sunday morning’s early AM Wayzata Beach adventure. We love going there on the weekends because the city maintenance crews remove all of the seaweed with a Bobcat, there are ducks, there is sand, there is a park that is the right size for toddlers and there is a nearby train track, all which provide excellent amounts of entertainment.

As I am typing this I am realizing the train track would make this beach sound not so nice to those who are not from Minnesota and thus perhaps not familiar with the story of railroad tycoon James J. Hill.

Long story short James J. Hill was building the railroad out to Wayzata. The original depot was situated so that people would need to walk a distance to it and this was unacceptable to them. So instead he ran the railroad track down the lakeshore and placed the depot on the lake. This created probably the largest piece of open shoreline on Lake Minnetonka (which again for those of you not from MN is A Place To Be) and so we have this train situation but we are also able to enjoy the lake instead of having it blocked off by…estates.

He is celebrated each year.

And that brings all of our out of state readers up to speed.

If you did not sleep through that extremely abbreviated history lesson, let’s get back to some things.

This weekend was just wildly busy. I feel like we spent most of Sunday running around doing chores and errands because we spent the rest of our weekend with the following: Marcus visiting with an out of town friend, Marcus going to his brother’s housewarming party, a mother blessing, a mini-family reunion of all of my adult cousins at our house on Saturday afternoon, Sunday brunch at a neighbor’s. And I gave my mom a pedicure because she got her hip replaced on Thursday and what is the point of even having a daughter if they will not help you with your nails.

It was a lot?!

I mean honestly I feel like I need a weekend to recover from my weekend.

In other news, Marcus and Critter built our kitchen table on Friday night. I ordered kitchen chairs today. Next on the list, bar stools for our island and a new light fixture. I’ll do a reveal after that.

Did I mention that we setup a hand-me-down sandbox from Uncle Adam and Auntie Whitney and Critter is just WILD about it? It looks like a turtle when the lid is on, we can bury things in it when the lid is off. That kid is just living The Life.
