Number one rule of business trips is: don’t do any unnecessary work while your partner is gone because there is enough if it already.
I embrace this by preparing food in advance so my dinner is not one of the things I have to worry about. This week, Dad actually grabbed takeout for us a few nights but I also ate a few pieces of this egg bake that I cooked and froze two weeks ago. I also bought…a lot of salad kits.
Friday – Chili-Lime Chicken Burgers, Roasted Sweet Potatoes, Garlicky Wilted Spinach
We haven’t had these burgers from Trader Joe’s in…forever? So I picked up a few packages of them at the store. Still delicious.
Miscellaneous – Chocolate Chip Banana Muffins
I made more of these because I only had one left in the freezer, and I had two bananas that NEEDED to go.
