This week our meal train started and I wheeled more food out of the freezer. It is such a blessing not to cook right now.
Sunday – Borscht, Caesar Salad
Mom dropped off some borscht on Thursday and it was more than enough for two meals. I had some extra salad kits in the fridge so it was perfect.
Sunday – Shrimp Creole over Rice, Salad, Bread
Billy was home so we had family dinner at Mom and Dad’s house.
Monday – Slow Cooker Mongolian Beef, Rice, Steamed Broccoli
I can definitively say there was nothing about the beef that was “Mongolian” but it was good. Honestly the most complicated part of the meal was washing the two dishes we used to cook.
Tuesday – Greek Salad, Spaghetti with Meat Sauce, Breadsticks
I call this fusion cuisine: my Auntie Kim gave us a batch of homemade spaghetti sauce when we moved, Paula sent a meal over as a First Day Alone With Two Children Honorarium (THANK YOU). Since the entree was already taken care of, I froze THAT lasagna for later and we ate the sides. And then I boiled some noodles! Teamwork!
