So then there was this point where I had NO meal plan whatsoever but we still needed to eat. To be honest, I tried to pick things where if we ended up NOT making them we weren’t going to end up throwing out a ton of food.
And then I had a baby so that was a good thing.
Friday – Salmon with Roasted Sweet Potatoes and Steamed Broccoli
When I plated this, I looked at it and told Marcus it looked like a weirdly nutritious meal. Basically we had some random sweet potatoes in the pantry and that is what the meal was based around.
As we were eating dinner I realized that this was the first time we ate black beans in this house! Which is only funny because that has been such a stalwart side dish (and occasional main course) for us.
Wednesday – Rotisserie Chicken, Fried Rice, Vegetable Blend
Shout out to my mother-in-law for bringing us a meal when we got home from the hospital. I…did my part for the team and boiled the vegetables.
Thursday – Corn, Cheddar and Scallion Strata, Steamed Broccoli
This egg bake is the first meal I’ve pulled out of the freezer and you guys it was so great to grab some containers, throw them in the fridge to thaw, and then heat them up for dinner.
Miscellaneous – Chocolate Chip Banana Muffins
Since I had some time on Sunday, I took the chance I was given to action some baking. I was also really glad to have a bag of muffins when we came home from the hospital.
