When I meal planned before our move, I tried to pick a menu of things that would be easy to assemble at night, so that we wouldn’t waste energy cooking that we would need for unpacking, and so that we would have time after dinner to do different projects. Also, we bought four salad kits to see us through the week. KIT SALAD I LOVE YOU.
I will say, coming from feeding four adults to two, I am trying to remember exactly what amount of leftovers we need in order to be set for lunches for the week, etc. We ended up coming pretty close, but still ended up deciding that tonight we’ll be having leftovers instead of takeout because our fridge is FULL.
Sunday – Slow Cooker Salsa Chicken, Rice, Southwestern Chopped Salad
You literally cannot even get more basic than this meal. Especially since the chicken was in the Crockpot and the rice was in the rice steamer.
Monday – Baked Potatoes, Simple, Perfect Chili, Caesar Salad
On Monday, Linds texted and I ended up inviting her to join us for dinner. We were already planning to have turkey chili on our baked potatoes but I just knew my one can from Trader Joe’s would not be enough. And, I really wanted to make Our Chili because we haven’t had it in ages.
Wednesday – Corn, Cheddar and Scallion Strata, Caesar Salad
This is the best vegetarian egg bake, in my opinion. Truth be told, I did not assemble it and let it sit in the fridge for 8-24 hours, I assembled it and threw it in the oven. It was still fine.
Thursday – Green Chile Potato Soup, Southwestern Chopped Salad, Corn on the Cob
Really, letting the Crockpot cook all of your meals is the best policy. Period.
