I’m just gonna come out and say it – for the forseeable future (AKA until I have time or energy or both), bagged salads are just going to be a way of life and I am not ashamed. They’re $2.49/kit at ALDI and they get vegetables onto our plate.

Sunday – Grilled Kalua Pork and Cheese Sandwiches on Jalapeno-Cheddar Bread
Swanky plating right? Dad made this pork and then I got this awesome loaf of bread from Reed’s and on Sunday they came together. Even Critter enjoyed a half-sandwich.
Wednesday – Egg and Prosciutto Sandwiches
Usually my solo-artist lunches don’t make it onto the round-up but since I put three slices of prosciutto on this sandwich and it was so tasty and so pretty looking I had to share.
Wednesday – Grilled Cheese Sandwiches, Sweet Potato Oven Fries, Caesar Salad
This was actually going to be a dinner just for me, but then Marcus made it home in-time for dinner so I split the salad and fries in two and added grilled cheeses. Who doesn’t love that?
Thursday – Easy Crockpot Creamy Chicken Enchilada Chili, Southwest Chopped Salad
Easiest, most tasty crockpot recipe to be sure.
