Friday Food Round-Up!

Slowly but surely we are getting ready for reintroduction into the wild (AKA living on our own).   Also a week of SO MANY TASTY THINGS. 

Saturday – Ribs, Roasted Asparagus with Cherry Tomatoes and Balsamic Vinegar, Creamy Potato Salad with Bacon from Cravings


Uno: I love ribs. Dos: CHRISSY DOES NOT MESS AROUND WITH THIS POTATO SALAD MAKE IT. 

Sunday – Mario Batali’s Spicy Shrimp Sauté, Steamed Rice, Asparagus


This is such a delicious and easy dinner and so spicy and delightful. 
Monday – Salmon, Hashbrowns, Salad, Asparagus


I planned this, Mom made this. 

Wednesday – Enchiladas, Black Beans, Cilantro-Lime Rice


My meal plan for this evening was the beans and rice. The enchiladas were leftover from Tuesday night. Together?  A feast!

Thursday – Butterfinger Lush


OMG MAKE THIS. 

A co-worker brought this in last week, I tried it, and then knew it had to come to girls’ night.  Amen.

Friday Food Round-Up!

My only regret of the week is that I did not capture the grill-out lunch we had for Father’s Day at my in-laws.  It was delicious and Critter ate a hot dog for the first time (as well as his body weight in cherries) and just loved it.

Friday – Lasagna, Caesar Salad, French Bread, Blueberry Buckle with Vanilla Ice Cream



Liz and Lee came for dinner.  Mom made her awesome lasagna (crazy that we never ate this prior to 2017) and Liz brought her delightful blueberry buckle for dessert.  Liz has been the bearer of desserts since I was little and her buckle is such a good one.

Saturday – Roasted Jalapeno and Chorizo Queso, Cheesy Guacamole, Stretchy Artichoke, Spinach, and Buffalo Chicken Dip all from Cravings, Celery, Carrot Sticks, Tortilla Chips, Pita Chips, Baguette, Salad with Apple, Cheese and Cider Vinaigrette


Mike and Jillian were coming for dinner and the only thing I wanted to eat were…dips?  And when I texted Jillian (who is also pregnant) she was like…yeah.  Dips.  Let’s go to that place.  So we did.

Shout-out to Jillian for bringing a salad so that we could actually call this a meal.

Sunday – Steak, Hashbrowns, Layer Salad


Dad really wanted to have hashbrowns for dinner again.

Monday – Pad Grapow Chicken from Cravings, Steamed Rice with a Soft Fried Egg, Asparagus


I finally took 10 seconds to read through this recipe when I was meal planning this week and it is SUPER easy.  I only added the egg because Chrissy referenced something to do with eggs in the recipe explanation.  It was a good decision.  Also, Critter ate about seven bites of chicken so I’d call it a winner.

Wednesday – Sesame Chicken Noodles from Cravings with Pea Pods


We made these.  For the first time on Thursday, Critter decided that he would eat long noodles (he was a macaroni noodle-only guy before this point) and was scarfing the leftovers down, so I guess we’ll be making this more often.

Miscellaneous – Chocolate Chip Banana Bread


I made this for Father’s day because Dad loves banana bread.  And then I ate 75% of the loaf and I AM NOT ASHAMED YOU GUYS.

Items of Interest

I don’t have the time or energy to organize my thoughts so here we are.

Last weekend I went to prenatal yoga for the first time in MONTHS. It nearly broke me, friends. I felt like every time we did an inversion all of the blood in my body was in my head, and while all of the stretching and  breathing felt good it did something terrible to my already hinky left glute (THANKS GLITTER). I could barely walk by the end of class. ANYWAY, I am going to give it another shot next week and then I think we’ll have a better idea of whether prenatal yoga is right for me. 

Unrelated: we have finally reached the TUMS Time part of pregnancy. #blessed

Greatest revelation of the weekend: ALDI now sells cold brew.  I have been keeping an eye out for this in the store for probably…six months?  At last, we are victorious!  It is $7.49 for a 32 oz jug and there is no price difference between french roast and regular (ahem Trader Joe’s).  I bought one of each so that I can try them and then decide which I prefer.  


As much as I really do love Trader Joe’s, if I could eliminate my trips for essentials there (cold brew, creamy salted peanut butter, 12 grain bread) so that we were only headed over for the odd case of two buck chuck and house liquor, I would not be mad.  It’s a 15 minute drive one way, so I just have other ways that I would rather spend my time.

Thanks to a hot tip from my mama group, I also scooped up a Step 2 brand water table (again, at ALDI) for $30.  Critter is delighted with it and we haven’t even put the water in.

Meanwhile we are continuing Critter’s transition to one nap (sob) and he continues to delight us as his proficiency in a variety of animal sounds (snake, owl, lion, butterfly, elephant) expands. He now barks when he sees dogs on walks and it is so cute that it hurts.  He says “blub” when he eats Goldfish. We are so excited to meet Glitter but also it is bittersweet that these 13 weeks are the last that it will ever just be Mama and Critter.  My tiny sidekick is getting an even tinier sidekick!

Friday Food Round-Up!

Getting back into the swing of things after vacation looks different now.  I made this meal plan on Tuesday of last week so that when we got home, we could make our grocery run that afternoon.  Also, there are just less salads on the post-vacation menu because we all know I am a pregnant person who cannot deal with them right now.

On the other hand, right now it is Friday, and I have yet to plan….50% of next week’s meals?  Pray for us, people.  We’re going to the grocery store tomorrow.

Monday – Brats, Spinach Salad, Potato Salad, Baked Beans


My mother would like to introduce you all to a new term – Sloth-e-que.  It’s when I plan a BBQ-style meal and then…she cooks all of it.  Voila!  It was good.

Wednesday – Grilled Teriyaki Chicken, Obsessively Good Avocado Cucumber Salad, Steamed Rice


We haven’t grilled enough this summer, so I’m trying to work that into our meal planning.  The chicken was just chicken breasts that sat in teriyaki sauce, marinating for a couple of hours.  Easy, and delicious.  The cucumber salad?  AMAZING.  We will be making this all summer long.

Thursday – Actual Drunken Noodles from Cravings, Chicken Egg Rolls, Peanut Coleslaw


I’ve turned the page on drunken noodles in Cravings too many times to count.  This week, I decided we could give them a try.  They were delicious, but with the amount of chopping and ingredients, the next time I make this will be on a weekend.

Phoenix!


Phoenix was great.  It was our babymoon/sixth anniversary trip and based on the amount of sleeping we did, we really needed to get away.

I just took a walk down (blog) memory lane and sorted out that our last vacation-vacation was in 2011 when we went to the Bahamas on a cruise.  The friends were fun, the weather was terrible.  And before that, we went to Hawaii in 2010.

So sitting by the pool and drinking pina coladas was very overdue.

We stayed at the JW Marriot Desert Ridge because they had one saltwater pool.  When we checked in, after some further discussion with the concierge, we learned that ALL of the pools including the lazy river were saltwater.

I haven’t been in a lazy river in 15 years because of my chlorine allergy, so it was HEAVEN.  We floated, and floated, and floated some more!


We did some very casual hiking on Camelback (with absolutely no intention of making it to the top!) via the Cholla and Echo Valley trails.



I ate my favorite Whataburger breakfast each morning – a Sausage, Egg, and Cheese Biscuit on a Jalapeno-Cheddar Biscuit with Hashbrowns, Coffee, and Spicy Ketchup.  It really is a high-quality breakfast for being fast-food and I am deeply sorrowful that we don’t have any here in Minnesota.


We caught up with Allison, and HRH, and Scott over dinner one night at Arizona Wilderness Brewing which was really nice, especially since I cannot make our girls’ trip later this summer.

Even though the weeks leading up to our departure were emotional because I didn’t want to leave Critter (I had terrible separation anxiety from Marcus at this point in my last pregnancy and it manifested itself in many tears as I left him in Las Vegas), it was so good for us to be away. I got to watch two whole movies on our flights (Hidden Figures, Secretariat), I finished one book and started another, we got to do things together without worrying about any sort of schedule.  It was good to have the break. By Saturday night I was more than ready to come back home.

6 Years!


It’s safe to say that we’ve been more well-rested in our lives, but there’s no one I’d rather be exhausted with than him.  Someday we will sleep again! Happy anniversary to us!
