Every Monday, the week seems like it will be endlessly long and every Friday, I have no idea how we tumbled through to the end of the week. Mysteries, I tell you!
Friday – Butcher and the Boar Sausages, Rosemary Roasted Potatoes, Baked Beans, Coleslaw
Originally we were supposed to go out for dinner with Dan and Eli but then my parents went Up North and we needed to make a new plan. Butcher and the Boar is a restaurant in downtown Minneapolis that also sells their sausages at one of the grocery store chains in the Twin Cities and they are just delicious. It was fun to be able to share a dinner with friends without having to slave over the stove.
Sunday – Crockpot Creamy Chicken Enchilada Chili, Cheesy Jalapeno
Bacon Cornbread from Cravings
We had a lot of different things happening on Saturday, so the crockpot was the best/only choice.
Monday – Shrimp with Cream Sauce, Salad
This is a classic family recipe that only took us…two full months to eat and it was perfect.
Thursday – Coconut Beef Curry, Slaw
It wouldn’t be an interesting week if we didn’t try a new recipe. True story: mom threw the roast in the oven (we just did it whole) and then a few hours later I tossed in the spices/coconut milk/onions/garlic/ginger. It turned out fine. For a lazy, low-maintenance curry it was great.
Miscellaneous – Sweater Box Chicken Salad
Something we have struggled with since moving in is achieving the right balance of leftovers to make sure that we have enough for lunch the next day. Marcus has a cafeteria in his office, and I can always get delivery or takeout, but on the days that I am home, we definitely need something to eat. This week I made chicken salad because I was craving a mayo-based salad (pregnancy, what?) and when Critter and I were wandering the grocery store, this came to mind as something that would be tasty and easy to prepare during naptime.
Miscellaneous – Cadbury Mini-Egg Blondies
Mom made these. I ate them.
