We tried so many new recipes this week! And I cooked four full meals this week! Who am I?
Friday – Perfect Seared Scallops with Warm Corn Salad from Cravings, Tater Tots
I’ve always wanted to try this recipe and since we can make shellfish here, we did!
Saturday – Lasagna
Mom made this with cottage cheese instead of ricotta and then we ate lasagna all weekend. It really was an 11/10 recipe.
Sunday – Salmon, Risotto with Porcini Mushrooms and Peas from Cravings, Salad
Mom made the salmon and salad, I made the risotto.
Monday – Shrimp and Grits, Salad
I promised to make shrimp and grits envisioning it to be less time intensive than it was. Beka shared this recipe care of her Louisiana cousin.
For the grits I added 1 cup of cheese, 2 T butter and salt and pepper to taste at the end. I also made the cream sauce with regular hot sauce because we did not have green.
Tuesday – Chicken Tacos, Pinto Beans, Cilantro-Lime Rice
I thought we had black beans and then we didn’t.
Wednesday – Sesame Chicken Noodles from Cravings, Stir-Fried Pea Pods, Kung Pao Cauliflower from Trader Joe’s
I made the sesame noodles with peanut butter instead of tahini this time and they were WORLDS better. Would not recommend this cauliflower product.
