If I have done one good thing for myself this year, it has been meal planning in advance. Any time one of us has been away from home for more than two nights, I have meal planned not only for the current week, but also the following week. And that has been helpful because then we come home and (1) know what is for dinner (2) know exactly what we need to get at the grocery store. No questions asked. Past Kat planned this week’s dinner menu and it was a good one. I also managed to re-arrange all of the meals once we got home because it just made more sense in practice.
What we ate from the pantry this week: wild rice. And astonishingly, there is still more wild rice left!
Sunday – Sausage Pasta Casserole from Farmhouse Rules, Garlicky Wilted Spinach
This dinner actually came out of our freezer. I will say that the casserole is much better fresh/as fresh leftovers but we still enjoyed it and we’ll continue this strategy of freezing because otherwise the dinner is WAY TOO MUCH to eat in one week.
After discovering that the jar of kimchi I sourced earlier in the year expired, I made a vow that we would consume this entire jar in a timely manner. At this point, I think we only have one meal left to go!
Unrelated: I continue to forget to put green onions on the list and so once again we instead have carrots and peas. Delicious.
Tuesday – French Stew with Steamed Cauliflower
This is such a classic family meal. The reason it made it onto the plan this week is because I knew I wouldn’t have enough time to that all of the meat we would need to/want to eat this week so it made sense to get some fresh (AKA not frozen) stew meat.
Wednesday – Chunky Chicken Thighs and Wild Rice from Farmhouse Rules, Garlicky Wilted Spinach
Fact: I actually made this because Critter seemed to enjoy the leftovers pretty well last time and I wanted him to be able to try it again!
Miscellaneous – Earth Cookies
Back in the saddle. At the rate we’re going, I’ll be making these forever.
