Here’s the deal. Between Marcus going out of town on business travel and then having two weeknights of social activity during the week and then you throw in a girl night for yours truly to top it all of? Mostly we lived out of our freezer this week. Which was really just as well. There is nothing terribly old in there, but as we eat our way through our freezer stash of dinners, it means that we can refresh it with new things!
What we ate from the pantry this week: rigatoni, macaroni.
What we ate from the freezer this week: Vegetable Quinoa Soup, Broccoli Cheese Soup, Lentil Soup, Mexican Lasagna.
Friday – Sausage Pasta Casserole from Farmhouse Rules, Asparagus Salad
When I was getting ready to make this dinner, I remembered that the last time we actioned it, it just made So Much Food. So I split the recipe in half before it went into the oven and I froze half of it. Which means that we will either eat the rest of it at a later date when I don’t have the time to cook OR it will get dispatched as a meal to yet another new mama.
Honestly, we were supposed to have a different dinner on this night, but our Monday night plans changed and we were no longer going to be eating together, Marcus’ car battery died and he had to go deal with that and the slow cooker just seemed like the best answer.
Thursday – Help with Hamburger from Farmhouse Rules and Salad with Blue Cheese Dressing
When did I realize that I was out of space on my phone? When I noticed that my main course photo was missing. Horror.
Anyway, even though it now a mystery meal, it was good. We’ll make it again.
Miscellaneous – Spicy Roasted Pumpkin Seeds
I make roasted pumpkin seeds (sometimes) once a year. If I am going to be totally honest, we left the pumpkin we carved behind at the party we attended and we brought home two pumpkins worth of seeds instead.
Miscellaneous – Earth Cookies
