Friday Food Round-Up!

We wheeled out some TRUE old favorites this week.  It was nice.

What we ate from the pantry this week: brown rice, wild rice.  So far, I will be honest, I don’t think this little experiment has yielded any sort of great savings.  And the only things I have completely used up are one packet of vanilla pudding, a partial bag of shredded coconut, and the Israeli couscous.  So we’ll be creating for a while as we empty our pantry shelves bit by bit.

Sunday – Green Salad with Blue Cheese DressingChicken Enchilada Quinoa Soup

Really, it was so nice to be able to enjoy a day without any sort of intensive cooking after coming home from vacation.  Note to file: Plan a similar arrangement for when we return from New York City.

When it came to the salad, the blue cheese dressing was a last minute addition.  We’ve made this dressing before and it is always just So Delicious.  Highly recommend if you are a fan!

Monday – Kimchi Fried Rice with Soft-Fried Eggs and Steamed Broccoli

We have not made this dinner in FOREVER.  Like long enough ago that my kimchi had expired (embarrassing).  I wanted a meatless meal this week that was fast, easy, cheap and delicious.  This one hit the spot.  We threw in carrots and peas because we had them and I substituted a regular onion for green ones because I forgot to put those on the list. It was great.

Wednesday – Chunky Chicken Thighs and Wild Rice from Farmhouse Rules with Garlicky Wilted Spinach.

This meal was like…obscenely easy to make.  I think it was more of a deconstructed chicken wild rice soup than anything else.  I did take an additional shortcut by using whole, bone-in thighs instead of cutting them into chunks.  This didn’t really make a difference with the dish.  Marcus and I both voted that we would make it again for sure.  A very easy one pot meal.

Thursday –Channa Masala with Steamed Broccoli, Rice, and Trader Joe’s Garlic Naan

We haven’t made this dinner since JANUARY.  The week before Critter was born, to be precise.  Which means that we haven’t eaten this for dinner in…nine months.  This is obviously a tragedy because you know this is one of our favorite dinners.  Back in…probably March, I made a mental note that we would know when we had enough time to make a dinner like this again.  We’re living that dream now, y’all.

I also realized that this dish is much easier to make than I had remembered.  So we’ll be making it more often.

Miscellaneous – Earth Cookies

Earth Cookies

I didn’t make these last week because I was out of town.  I was not sure if I’d really miss them or not until I was eating granola bars every day instead because I still needed to be eating.  These are a significantly healthier option.  So, in the rotation they will stay.
