I think this might be one of the more dysfunctional round-ups that I’ve ever written, largely because we were not eating in our house a great deal this week. We’ll get through this.
Saturday – Roasted Cauliflower, Feta and Orzo Salad from Cravings
Yes, we make this salad every week now. Actually, we had family dinner at Mom and Dad’s house with longtime family friends and Mom asked me to action this. So I did. Every time I make it, it gets easier so that’s motivation to keep making it, right?
Monday – Vegetable Fried Rice
I volunteered to bring a rice dish for Rosh Hashanah because after failing to bring a more elaborate dish to dinner one Shabbat evening because of…#momlife, it just seemed like a better idea to choose a dish where most of the work was done by an appliance. If we ever make this again, I’ll post a recipe. It was tasty, but not on the same level as Kimchi Fried Rice.
Tuesday – Vegetable Fried Rice with Soft-Fried Eggs and Bag Caesar Salad
Since the rice made the most leftovers ever (even though our merry band of feasters did their best to devour it), it was just easier to…not cook. Marcus and I were both craving vegetables and I have a real thing for bag caesar salad kits? I think it’s because we ate a lot of them growing up when they were the latest in salad innovation so they’re just comforting. Really. It 100% did not disappoint.
Thursday -Vegetarian Chili Cheese Tots, Brownies
It was finally Marcus’ month to host poker night. His parents generously allowed him to commandeer their house for the festivities because our townhouse is just NOT large enough to host an evening party and allow The Boy King to sleep successfully in the nursery. To that end, since my in-laws keep a kosher kitchen, I actioned our favorite chili recipe in a vegetarian way (with some modifications – again, if we ever re-make it, I’ll write out a real recipe) so that they could adorn their tots with sour cream and cheese as well. Otherwise they would just be…chili tots. Not that this would be such a terrible existence.
Miscellaneous – Earth Cookies
Someday I’ll stop making these. This month is not that time.
