Friday Food Round-Up!

TGIF, FRIYAY and all of that jazz, party people.

Saturday through Tuesday, I subsisted on the odd thing pictured below as well as a bunch of leftover enchiladas (just living my truth) and coffee.  It worked.

Saturday – Roasted Cauliflower, Feta and Orzo Salad from Cravings

I whipped this up in the morning before Marcus headed out to D.C.  It was an easy enough delivery vehicle for vegetables last weekend so I knew it would be good enough for this weekend as well.

Sunday – Garden Pie

Things I learned: You can freeze a garden pie and reheat it and it turns out FINE.

Other things I learned: It was time to re-write some of the recipe because based on the modifications I’ve made over the years (all in my head) it is now a simpler, yet still equally as delicious creation.

Tuesday – Slow Cooker Creamy Tomato Basil Tortellini Soup

I would say that the pros to this recipe are that it was a great delivery vehicle for veggies and making something in the crockpot made me feel 10/10 productive while I was counting down the minutes until Marcus got home (SORRY GUYS IT’S A REAL THEME THIS WEEK).  It was also a tortellini delivery-method and that really spoke to me.

Wednesday – Sausage Pasta Casserole from Farmhouse Rules, Steamed Broccoli

FARMHOUSE RULES STRIKES AGAIN.  I’d say that this one took 30 minutes of active cooking time because even while the pasta was boiling I was grating cheese and slicing fennel and onions and what have you.  This was a superb dinner and we will eat it again.
