Happy Friday! So much cooking this week. So much varied, and different cooking this week!
Friday – Pepperoni, Mushroom, Pepper, and Onion Pizza on Pizza Crust
The last time I made pizza at home…possibly last July? I cannot believe it has been that long and yet, it makes total sense. Since we were not going up to the cabin, it was EXTREMELY important to me that we eat pizza. And I was reminded that making it from scratch is not actually that hard. We’ll probably be doing it again soon.
Saturday – Ahi Tuna Bowls and Trader Joe’s Chicken Cilantro Mini-Wontons
The first time I made this, Marcus did not get to eat it because it was a meal that Michelle and I ate to celebrate the end of frisbee season. He was 11/10 impressed. The mini-wontons were a total impulse treat but we’ve had 1/3 bag of them living in the back of our freezer for too long. This was the way for them to live their best life.
Sunday – Caesar Salad and Vegetable Quinoa Soup
Someday, I will write a blog post about the plight of assembling any sort of lunch on the weekends. In the meantime, salad came together easily enough and the soup was actually something that Erica brought us when Critter was just a wee pup.
Sunday – Grilled Chicken Breasts with Lemon Pepper Marinade, Cheesy Jalapeno
Bacon Cornbread from Cravings, Roasted Cauliflower, Feta and Orzo Salad from Cravings, Corn on the Cob
Luke and Patty were kind enough to join us out at our house for dinner (since we can’t exactly get out all the time) so I cooked up a feast. I will be honest, there was a point, after the cauliflower salad was done and the chicken was marinating where I thought Oh My God Next Time I Am Just Making A Casserole but it was SUCH a good meal. It was even nicer that we could share it with friends.
Wednesday – Mexican Chicken Salad with Taco Ranch Dressing from The Williams-Sonoma Bride & Groom First and Forever Cookbook
HELLO OLD FRIEND. The last time we made this was the week before Critter was born. It is still really, really tasty.
Thursday – Green Chile Potato Soup
The Blog is informing me we have not eaten this since April, which I find to be surprising. Then again, we haven’t exactly had any reason to turn on the crockpot for a while now so I probably should not be So Shocked.
Miscellaneous – Earth Cookies
Always, I am making more of these.
