I didn’t really have a lot of time to cook this week since we didn’t even get home until Tuesday! By the time Thursday rolled around, it felt like it was a Tuesday since my week had basically only started, and yet, we were at the end.
Tuesday – Chickpea Salad
I wanted to get something fresh into the fridge so that I could have some lunch-y leftovers to take to work this week.
Tuesday – Garden Salad with Rotisserie Chicken
This has become a sort of go-to for us when we get home from the cabin because it is fast, it does not involve cooking (really) and it is healthy-ish.
Wednesday – Trader Joe’s Chile Lime Chicken Burgers with Coleslaw and Corn and Avocado Salad
In my other life, we would have been eating tots, but having salad-sides again seemed more appropriate after the longest long weekend.
Thursday – Drive-In BBQ Oven Fries
The Wienery is a Minneapolis dive that Marcus and I love. We actually stopped there for a 5th anniversary lunch because as you all know, we are very fancy people. They have a dog and corresponding fry plate that are titled as “drive in” which means that both of these items are topped with chili, cheese, and coleslaw. Since I had some extra rotisserie chicken in the fridge, I just picked the rest of the chicken off of the bone, tossed it up with some Franklin BBQ sauce (thanks Billy!) and then plopped it right on top of the fries in place of the chili. It was pretty splendid. It also got that chicken and the stray potatoes out of our fridge!
