We reached some next-level cooking this week and hosted some friends as dinner guests on Monday evening. I think even six weeks ago, this would have been completely unthinkable.
Friday – Salad, Sally’s Artichoke Ramekin, Grilled Chicken Kebabs from Von Hanson’s
Since I forgot to put red peppers on the list, we ended up substituting green chiles in “artichoke ramekin” which as I am sure you can guess is a delicious artichoke dip. It was still great.
Sunday – Chickpea Salad
It has been just AGES since I’ve made this (which is ridiculous because it is so easy) but this week I got to and it was WONDERFUL.
Sunday – Green Salad
Father’s Day dinner offering for sure. The rest of the meal that I DIDN’T make, included crab, steak, garlic bread, and baked potatoes. So that was awesome.
Monday – Grilled Chicken and Orzo Salad with Spring Peas from Farmhouse Rules
This was the meal we shared with guests. I wanted to make orzo salad again because I’ve been in sort of a pasta salad mood lately (can you tell?) and my sister-in-law brought us some orzo to make it with!
Tuesday – Grilled Trader Joe’s Turkey Burgers with leftover Orzo Salad
My sister-in-law has been over for dinner on Tuesday nights for probably…a month now? It has been really nice to have some girl time, and since I don’t work on Tuesdays, it’s nice to have adult contact outside of baby yoga.
Wednesday – Auntie Lisa’s Famous Mexican Quiche
Does this taste at all Mexican? No. But it was tasty and it would feed a crowd. Which I wasn’t trying to do, but I was trying to make sure the fridge was packed with food for Marcus this weekend.
