This week, I used both of the remaining pie crusts that were camping out in my freezer. Gold star for me!

TBH, when we decided we were going to do CIO, we also decided to have a SWANK date night-in (complete with $$$ bottle of wine!) because we earned it. Seriously. And it was SO GOOD.
Sunday – (Lighter) Spicy Turkey and Hatch Quiche, Salad
I’ve always wanted to try this recipe of Kate’s and I had all of the ingredients we needed to make it happen!
Monday – Spicy Italian Sausages with Cauliflower Giardinara, Three Bean Salad, and Jalapeno-Cheddar Potato Chips
Real talk: We burned the first batch of Roasted Garlic Sausages to a crisp on the grill. It happens. So we had a do-over and this dinner was really quite a bit better with the Italian Sausages.
Tuesday – Lawn Chicken Salad from Farmhouse Rules
My sister-in-law came over for dinner and I decided that we would eat salads. This one has revealed itself to be delicious and interesting and still very easy to make. It will stay in our dinner salad rotation.
Wednesday – Turkey Picadillo Sandwiches from Great, Easy Meals, Tater Tots, Salad
We were supposed to make coleslaw (hello, lazy side) but after beginning to mix up the slaw, I decided the cabbage looked a bit shady (read: food poisoning) so we switched to salads made with leftover salad toppings from Tuesday.
Thursday – Cheesy Jalapeno Tuna Casserole with Potato Chip Topping from Cravings, Salad (not pictured…again, oops!)
100% pulled this dinner out of the freezer.

This week at work, we had our annual Tot Luck and I decided that I would try my hand at a Sweet Potato Pie. To be honest, I really don’t have the time for any sort of exotic or high level baking, but I’m still glad I put the effort in for this one. People raved.
