Friday Food Round-Up!

This week, I accomplished Next Level mom-ing and actioned a meal for a mama with a new little one at home.  We also managed to try a few new dishes because again, I am trying to fend off some sort of cooking all the time-induced boredom.

Sunday – Fish and Corn Cakes with Tartar Sauce, Roasted Root Vegetable Hash, Steamed Asparagus

Root vegetable hash is actually a fancy way of us saying that we had two stray potatoes, four extremely small sweet potatoes, and a bag of orphan carrots in the fridge.  I had to do something with them.

We ended up actioning fish cakes again because I had an orphaned bag of salmon filets in the freezer that I am pretty sure I purchased over a year ago.  Yes, seriously.  It was time to move them out.

In short, this could actually be called a dinner of odds and ends that just so happens to look MUCH prettier than that.

Monday – Sausage, Peppers and Onions, Salad

Obviously I didn’t take a photo of the salad but you’ll just have to trust that it was there.

I wish I could explain why I felt the need to action sausage + peppers but I have literally no clue.  Anyway, this Giada recipe is bomb dot com and we will make it again, but probably in the fall when it’s cooler.

Wednesday – Trader Joe’s Chile Lime Chicken Burgers with Avocado, American Cheese, and Hatch Chile Aioli, Trader Joe’s Hatch Chile Mac n’ Cheese

Me to Marcus: This is how most people are making dinner every single night.

Verdict on the chicken burgers: 10/10 would buy again.

Verdict on the mac n’ cheese: not bad, but we won’t buy it again.
