When I was doing this week’s meal plan, I really felt like I was phoning it in you guys. I don’t know if I am burned out on cooking, or if I just wasn’t in the mood, or who knows. Despite the fact that we’ve tried so many new recipes over the past three months, I just felt…bored.
Anyway, this week I tried to make a lot of stuff that we couldn’t eat during Passover for the sake of variety.
Friday- Sriracha Caesar Salad from Cravings and Tater Tots
Okay. So the Tater Tots were technically NOT kosher for Passover (Passover didn’t end until Saturday night), but we needed to add calories to dinner and we were both really over roasted potatoes. So we made them and at least they weren’t bread or rice?
Sunday – Lemony Arugula Spaghetti Cacio e Pepe from Cravings
Verdict after making this a second time is that it wasn’t bad, but it’s not life changing. The truly life-changing part of the meal is the spicy Italian chicken sausage from Trader Joe’s in that we now know it exists and can eat it on the regular.
Monday – Kimchi Fried Rice with Soft-Fried Eggs and Steamed Broccoli
Haven’t made this one in a solid month so it was time to put it back into the rotation. This dish has become a really excellent staple in our dinner rotation.
I should probably be somewhat ashamed that we made two Rice As A Main Course meals in one week, but whatever. We ate.
Thursday – Chicken Enchilada Quinoa Soup
Miscelleaneous – Earth Cookies
