Friday Food Round-Up!

I am pretty sure that our efforts at keeping kosher for Passover during my first full week back at work could best be described as a death wish.  But we didn’t let that stop us!  I also feel like this is pretty obvious, but in case it is not, we don’t purchase kosher for Passover products.  We just avoid chametz.  Also, we continue to keep our own version of kosher and do not mix beef and dairy (but do mix poultry and dairy).

I also wanted to give an update on our food budget.  We’re spending approximately…$60/month more than we had originally budgeted for this year.  I am sure that this is due to the fact that we rarely go out any longer (and thus cannot spend our “allowances”), and we cook nearly every meal of the week.  We’ve adjusted our food budget and our allowances accordingly to reflect this.

Sunday – Fish and Corn Cakes with Tartar Sauce, Wilted Greens, Baked Potatoes


Y’all know we RARELY make fish in this house.  This is no exception.  We didn’t make the salmon that went into these fish cakes, Marcus’ Aunt Lisa did for the second Seder.  After eating the fish in its True Form once, and looking at the volume of fish we had left, I decided to give these fish cakes a shot because I have always wanted to try such a recipe.  I omitted the corn, and used crushed matzo instead of panko and THEY WERE SO GOOD.  WE ARE GOING TO MAKE FISH ALL THE TIME NOW.

Monday – Shepherd’s Pie with Sweet Potato Topping


This is actually a “Whole 30-approved” meal that Ang made us, when we were still living off of the land and the kindness of friends.  It was monstrously good and knowing what was in it (Passover-safe things), it was a no-brainer to add to our meal plan.

Tuesday – Green Chile Potato Soup


After a lot of thinking on the matter (yes, seriously), I’ve decided that Tuesdays and Thursdays will be our crockpot days since I am home to do the assembly.  Frankly, based on my schedule, there’s really not an appropriate time to get things started to cook either within the 6-8 hour range or the 3-4 hour range when I am out of the house.  At least not if we want to eat dinner at any sort of normal time.

Thursday – 2-Ingredient Slow Cooker Salsa Chicken and Baked Potatoes


Honestly, this is what I could handle on a Thursday night.  The week wiped me out!

Miscelleaneous – Earth Cookies


Oats aren’t really kosher for Passover but I have a baby I need to feed and a middle-of-the-night snack craving that has to be quelled.
