Friday Food Round-Up!

I don’t even want to say it because I’m terrified I will curse us or something, but this week, we got to eat dinner.  Together.  At our table.  It was amazing.  For the last 12 weeks, cooking has been a zen exercise in putting a lot of effort into something that has yielded a relatively small reward.  But I have continued to do it because it has been something of an anchor to my pre-Critter life and a desperate effort at normalcy.  And I know that for all of the days/nights (100%) that getting a meal on the table was stressful, it was still better for me mentally than eating takeout all the time.

Sunday – Frijoles a la Charra from The Homesick Texan with Rice, Soft-Fried Eggs, and Avocado


You guys, the more I make this dish, the faster I get at it.  But I don’t have it memorized yet so, something to work towards.

Tuesday – Slow Cooker BBQ Chicken with Coleslaw and Cheesy Jalapeno Bacon Cornbread from Cravings


This time I made the cornbread with green chiles instead of jalapenos because that’s what I had on hand.  It’s still phenomenal.  I can only wonder what it would taste like if I actually had the chance to action it with bacon.

Wednesday – Breakfast Tacos

This time, I even remembered the refried beans!

Thursday – Roasted Garlic Chicken Sausages from Trader Joe’s with Sauteed Onions, Oven Fries, and Asparagus Salad


I went to work, came home, and then we made this dinner.  I mean seriously, I am so proud of us.  I’m also glad that The Universe directed me to action asparagus salad because it is just delightful and we haven’t had it in ages.
