Guys, I don’t know what on Earth I can possibly pull out of a hat to cook next week, but we’re gonna go for it. I’m also super interested in knowing how our grocery bill has changed now that we’re eating at home so much more. Since Marcus does the shopping, I’ll have to interrogate him.
We made four new recipes this week, so I’d say that’s pretty great!
Saturday – Super Tuna Melts from Cravings and Salad
Congratulations Chrissy Teigen, you have successfully convinced me to purchase like five more cans of tuna in the past month than I have since I moved into this townhouse. Great filling, great crispy grilled sandwich exterior, not-s0-melty cheese (I think because of the thickness). Next time we’ll be making these open faced and that is fine.
Somehow I found the time to whip up another batch of croutons and homemade salad dressing on Saturday and that made for some quite delightful salads.
Sunday – Trader Joe’s Roasted Garlic Chicken Sausages with Sauteed Onions, Steamed Asparagus, Elote en Vaso from The Homesick Texan
I had some sort of vision of us grilling this dinner. That was a little idealistic since Critter was a little fussy and both Marcus and I had been out of the house for most of the day. But it sounded good in concept. Anyway, a pretty easy meal to throw together nonetheless.
Monday – Chinese Chicken Salad with Crispy Wonton Skins from Cravings
Guys, I hacked like crazy here. I used romaine instead of cabbages and shredded carrots, I bought the wonton toppers from the salad aisle because we were never ever going to have the time to make those. I thought it was an average salad. Marcus was a big fan. But, hey! That means we ate salad twice this week – slow clap for us!
Wednesday – Chicken Enchilada Quinoa Soup, Cheesy Jalapeno
Bacon Cornbread from Cravings
Some of you might be thinking, Kat that’s not your table, that’s your counter. You’re right. Some nights (rarely) we eat together. Some nights we take turns eating alone at the table (sad). Other nights we have nursery picnics where we take turns eating on the floor of the nursery. This was one of those nights!
Marcus declared that this soup tasted “earthy” but good. I would agree with his assessment there. After taste testing (and we really did both enjoy it), I found The Lord directing me to make a cornbread…possibly from Chrissy Teigen’s cookbook. We didn’t make it with bacon because we can’t cook that in this house but HOLY COW YOU GUYS. This cornbread changed our lives. Make it now.
Thursday – Slow Cooker Chicken Tikka Masala, Steamed Broccoli, Rice
It was Marcus’ birthday and I asked him what he might like to have for dinner. He suggested this. I did all of the prep for the Tikka Masala on Wednesday night with the exception of browning the chicken. I also totally skipped the marinating part because that is seriously not the flavor builder in this show and I did not have the time or patience.
