Y’all, every week I continue to just be floored by the amount of care we have received from our village of people. Breads. Turkey dinners. Salads. The training wheels are slowly coming off but God we could not do it without them.
Friday – Chunky Creamy Mushroom Soup from Cravings and Grilled Cheese
This soup was not terribly difficult to make and we enjoyed it but I’m gonna be honest, y’all. I have serious questions about a soup where you consume 1/2 pound of mushrooms per serving. Like…I like mushrooms but that is really a lot of them.
Sunday – Cheesy Jalapeno Tuna Casserole with Potato Chip Topping from Cravings
I have never eaten a tuna noodle casserole in my life. Marcus has fond memories of them from his childhood. The only way I would possibly consider making such a dish is if Chrissy Teigen said so and Chrissy Teigen said so. More dangerously, I now have a half bag of those super-delicious Old Dutch Jalapeno-Cheddar Kettle Chips in my pantry. I have to pretend they don’t exist or I will eat them all in one day.
This recipe made a casserole that was no lie, probably four pounds. After looking at the 9″ x 13″ pan prior to baking and trying to figure out how we could possibly consume all of it, I ultimately decided to scoop half of it out and into a disposable pie tin for freezing. We will eat another half-casserole on another day. Even with that half in the freezer it still shook out to a total of three meals for each of us.
Wednesday – Breakfast Tacos
It’s really good that these are easy because Critter was kicking up a ruckus and this would have otherwise been a night to wave the white flag.
Thursday – Crockpot Sesame Honey Chicken with Rice and Steamed Broccoli
More Chicken In A Pot. As promised. This is yet another recipe I have known about but have never attempted. Less impressive than the others, but a new flavor! Now I need to figure out next week’s Chicken In A Pot.
Miscellaneous – Cadbury Mini-Egg Blondies
I honestly was not planning on another baking expedition quite so soon but Critter was going to visit my office and it happened to be a potluck day, so I told them to sign him up for blondies because they are reasonably easy to make. And it meant that I got to eat more blondie batter. Win-win.
Also, shout-out to Angie for leaving her 8″ x 8″ pan behind when she brought dinner. It has become my blondie baking pan. Perhaps if she is lucky, when it returns to her, it will have blondies in it.
Miscellaneous – Earth Cookies
Just expect these to be a part of the weekly rotation for a while. I made a few tweaks to the recipe – you need three large bananas or four small ones in order for them to be appropriately chewy, in my opinion.
