This week, we were blessed by friends who brought us soup, cupcakes, crockpot dinners, and shepherd’s pie. Next week we get to see Melissa and then we have to stop living off of the land and start caring for ourselves once more. I honestly do not think we could have survived the first month without the constant stream of food and the nightly visitors. The food because some days there has been time to cook (but most days there really hasn’t been) and the visitors because seeing all of my girlfriends has kept me going.
Saturday – Kimchi Fried Rice with Soft Fried Eggs and Steamed Broccoli
This is a meal that Marcus prepped and then I stepped in at the very end to assemble. Teamwork!
Sunday – Baked Potatoes with Turkey Chili
The Turkey Chili was actually left over from what Galina brought us and Marcus spearheaded the potato baking process and whatnot. I was busy nursing my 101 degree fever and being unhappy about that.
Tuesday – 2-Ingredient Slow Cooker Salsa Chicken Tacos
Real talk: I have “known” about this recipe for several years. Probably two months ago, Lindsey told me that she had started making it, and so I made a note-to-file about making this once Critter was here because it sounded like a manageable recipe.
YOU GUYS THIS WAS SO STUPIDLY GOOD. We will be making this more. A lot more, actually. Because it means that we will be able to eat dinner when we want to (or need to!) cook.
