We really took advantage of the three day weekend to cook. A lot. Also, I felt like it would be best to celebrate the new year by eating some really rockin’ food.
Marcus also observed to me this week that I haven’t put lettuce on our grocery list in FOREVER. He’s not wrong. We haven’t. I told him that right now I am helping Critter to grow a brain and pack on pounds and that there will be time for lettuce once Critter is here.
Friday – Chilaquiles with Black Bean Salsa from The Homesick Texan Family Table
New Year’s Day brunch? Check. Still at home in PJs? Check.
Friday – Roasted Leg of Lamb with Baked Potatoes and Asparagus with Hollandaise
This was the first leg of lamb we ever roasted at home! Most exciting! Some confessions: the lamb was pre-marinated and the hollandaise sauce was from a packet.
But, we used the china again because I was conducing the china census and it’s not very difficult to pull out when there are only two of us
Saturday – Gyros with Homemade Tzatziki Sauce
Even as we were eating lamb for dinner, I knew that they were going to be best reincarnated as gyros the next day. Oh, how glad I am that I was right about this!
The Vikings were playing for the NFC championship on Sunday night. I told Marcus I wanted to make something that was football-y for dinner. He thought something with a nacho-feel would be delicious and so I proposed these fries. They’re a riff on one of our favorite dishes from Chino Latino, Popocatepe, and it was a big hit for both of us.
Monday – Frijoles a la Charra from The Homesick Texan with Cilantro-Lime Rice
I was actually supposed to make this dinner last week, but we just didn’t, y’all. So I made it up to us this week. Every time I make these beans, they get even easier, which is great news because it’s nice to have another rice and beans option that can be a go-to dinner.
Thursday – Sesame Chicken with Garlic Green Beans and Rice
Based on the blog, we haven’t made this dinner in something like two years, which is crazy. It’s not very hard, and it is really not anything like the sesame chicken you would get if you were ordering takeout, but it really is quite nice.
