How to summarize this week: everyone I had dinner plans with was afflicted with some form of illness, and that resulted in a week of dinners at home and date nights with Marcus. It was honestly really nice to just…not have plans.
Sunday – Mustard Milanese from The Smitten Kitchen
We got home from vacation, we ate some green things. Pretty standard routine, no? Marcus said he missed this dinner, so twist my arm, we’ll keep this one in the winter rotation.
Monday – Frijoles a la Charra from The Homesick Texan and Texas Sweet Onion Casserole with Rice, Chipotle, and Gruyere
We were supposed to have cilantro-lime rice, but eating cheese rice was really important when it was time to get dinner started. Honestly, eating cheese has been really important to me in general this week. Y’all know we never ever make rice casseroles but this really hit the spot.
Tuesday – Lebanese Meat-Stuffed Pitas (Arayes) and Tangy Tabbouleh from Balaboosta
I think that I probably printed off the Arayes recipe two years ago. I don’t know why I decided that we FINALLY needed to make it this week, but we did. I can truthfully say that we haven’t eaten anything else like it before and it was a fun dish to make.
I know tabbouleh is typically made with bulgur, but we couldn’t find any at the grocery store so we used some barley instead and that turned out just fine.
Wednesday – Sesame Spiced Turkey Meatballs and Smashed Chickpea Salad from The Smitten Kitchen Cookbook and Steamed Broccoli
Another favorite dinner, finally made. We were out of sesame seeds, but it didn’t really change anything. In the course of turning the spice cabinet upside-down searching for sesame seeds we ended up re-arranging the whole darn thing so it should be really exciting to cook for the next few weeks as we find out what went where.
