Not a wild week, kittens. Marcus was in Las Vegas at a conference, I had plans. This week was all about convenience food.
Miscellaneous – Chickpea Salad
Sure we were out of parmesan cheese, that didn’t make it into the salad this time, but it survived. Easiest dish to make after hopping off a plane.
Thursday – Artichoke Dip Grilled Cheese and Bear Creek Navy Bean Soup
We’re starting to work a grilled cheese theme, can you tell? I was at a volunteer thing that ran until 7:00 PM and this was a good, simple dinner. For some reason I had it in my head that artichoke dip would be a good grilled cheese filling so I mixed up a can of artichoke hearts (chopped), 1/2 cup whipped cream cheese and 2-3T of mayo and spread it onto the bread. Marcus agreed that we could eat this again.
The soup? Also delish. 100% a convenience food, but we’d buy it again. I grabbed a few packets of Bear Creek soup mixes at Cub last weekend because they were on sale and I foresee more of these meals in our future.
