You guys, I just want to give myself a pat on the back this week because despite it being summer and despite the name of the game being chicken-corn-potatoes-green beans-done, we actually made a new recipe this week! Don’t think we’re getting crazy, we’ll be back to our regular routine next week, I’m sure.
Sunday – Frijoles a la Charra and Red Chile Rice from The Homesick Texan with a Soft-Fried Egg
After eating the Bourbon Ztreet (AKA enchilada) pizza at Zorbaz, I could not stop thinking about the rice and pinto beans that were on the pizza. It was a pretty logical choice for us to make more beans and more rice when we got home. We’ve made red chile rice tons of times before but we have NEVER made these beans. I do not even know how this is possible since we have owned the book since 2012. ANYWAY. We will be making this recipe again and again because while more complex than our basic weeknight Black Beans go-to, it was really so simple and SO phenomenal.
Did I mention that we really loved the beans?
Mom was out of town, so Dad came over for dinner! It was raining out but Marcus still grilled because he was my husband-hero. Act surprised/not surprised, we ate our standard summer dinner and it was pretty easy and pretty great.
