I think we have officially reached peak summer, which means that all of our meals have deteriorated to the very simple combination of protein-Gregor Farm vegetables.
I will also observe that my exhaustion was such this week that the idea of thawing and cooking chicken breast was…too much. Chicken sausages, on the other hand? JUST FINE. I’ve had a weird thing for sausages and brats all through this pregnancy, so I’m just going to keep working the theme and I’m not going to lose any sleep about this.
Miscellaneous – Chickpea Salad
Great news – I finally wrote out a recipe for this one (click on the link for the recipe!) so that we can all eat chickpea salad for lunch all the time.
Monday – Chipotle Cheddar Chicken Sausages, Corn on the Cob, Coleslaw, Favorite Three Bean Salad
I think we’ve watched me explore all of the ways that green beans can be prepared, so I was pretty proud of myself when I remembered that Megan posted this three bean salad recipe and how much we loved it when we ate it during our girls weekend!
Honestly, we ate the coleslaw because I had a bag of slaw and some dressing leftover from the bachelorette weekend, so that was pretty straightforward.
Wednesday – Apple Chicken Sausages, Corn on the Cob, Garlic Green Beans, Oven Fries
What is hilariously good and bad at the same time is that this is what defeat looks like on our dinner plate. This was the dinner that was supposed to have chicken breast but just didn’t and we ended up grilling more chicken sausages and now Marcus is all Once Per Week Only, Please! It’s a difficult life.
