Truth be told, I had the wackiest schedule this week and it’s a real miracle we didn’t end up living off of takeout.
Sunday – Mexican Fried Potatoes (topped with a soft-fried egg) and Elote en Vaso from The Homesick Texan
We were supposed to have breakfast tacos, but for whatever reason, that just seemed like too much cooking. Don’t ask, gang. Just don’t ask. A perfect (and delicious) compromise was putting the eggs straight onto the breakfast potatoes.
Monday – Kimchi Dogs with Garlic Green Beans and Corn on the Cob
Last week, I was the one who did the grocery shopping and subsequently hit up Trader Joe’s. As y’all know, we are extremely fond of their Roasted Garlic Chicken Sausages but I wanted to try a few other varieties. I was surprised to find spicy chicken “kalbi”-style sausages in the case, but there they were! I was so jazzed to try them!
Pregnancy tastes are a fickle, fickle friend. The sausage pictured above was Marcus’. I was too creeped out by the kimchi from the outset so mine was topped with none of that and the actual sausage was just too much for me to deal with (though I ate the whole thing). That being said, the flavor was spot on, and I think that once my tastes are a little more…consistent, we will really enjoy cooking with this one in the future!
Amateur alert: I should have taken the green beans off of the heat before tossing them with the parmesan, but Marcus remarked that he actually liked the cheese chunks, so there is that small mercy.
