It’s hard to believe it’s already Friday – this week just flew by! What did we eat this week?
Sunday – Migas Fried Rice
Since we like kimchi fried rice so much, it seemed only logical that migas fried rice would be the next step. Making the flavor base (an exotic paste of lemon grass, roasted tomatillo/jalapeno/onion, dried chiles and spcies) was a little bit of a pain, but it was fun to envision fried rice in a new way. I also didn’t mind frying up some corn tortillas because we know I could probably eat those as a meal if I had to.
Monday – Linguine with Green Olive Sauce and Zesty Breadcrumbs, Salad
I know I don’t usually make pasta, but I saved this recipe once upon a time and then I re-discovered it, so it was time to give it a try in the spirit of working through all of the recipes I tore out of magazines that one time. I have never topped anything with toasted breadcrumbs before and I feel like that made this super fancy even though it really wasn’t.
Wednesday- Great Grandma Turano’s Meatballs from Dinner: A Love Story with Garlic Bread from Lunds+Byerlys
This was supposed to be a middle eastern dish involving loose meat, lentils and pitas. But then it rained all day on Wednesday and it was impossible to imagine eating that, so I chose something a little bit cozier for the weather.
Thursday – French Toast Waffles
You guys. This is the greatest food on earth and I have remembered it ever since Jeanne and her husband actioned this dish for us when we were having our girls’ weekend in Houston. Life changing.
Since I spent Thursday afternoon learning how to make challah with our Rabbi (and ended up with four loaves of challah at my house!), I knew exactly what I needed to do next.
French Toast Waffles. If you’re not a bread maker, not a problem. Get over to your closest bakery or grocery store pronto and grab yourself a loaf of challah to get started!
