Friday Food Round-Up!

We are en route to Omaha right now, so next week’s meal planning and grocery list-making has already been completed.  Marcus also told me that we were $3 under on our grocery budget this month, which is just absolutely amazing to me since we bought so much meat.  That makes me really optimistic that we can have a really successful May with our grocery budget as well.

Sunday – Pollo Asado and Buttermilk Bacon-Fat Flour Tortillas from The Homesick Texan Family Table, Black Beans, Cilantro-Lime Rice


Sunday was another one of those I just feel like cooking all day – days.  We really loved pollo asado the last time we made it, but I did not like the amount of energy it took to make them marinade.  This time, I made three batches of marinade, split them in half (so, 6 dinners) and then froze five dinners worth of marinade.  This spring is going to be so easy/delicious!

Marcus actually learned how to roll out tortillas, which he despised and I found to be an immense help.  He will have to learn to love this because this is his job now, like mincing cilantro/parsley and dicing jalapenos.  🙂

Monday – Strawberry Shortcake from The Homesick Texan’s Family Table


We went to dinner at Melissa and Jonathon’s house and I totally forget to take a snap of the 11/10 fajitas that Melissa actioned.  In fact, those fajitas were the reason I was inspired to turn to The Homesick Texan for dessert inspiration.  Real talk: I ate two shortcakes and it was the right decision.

Tuesday – Soy Ginger Meatballs with Garlic Green Beans and Steamed Rice


Truth: Even though my friends are food bloggers, I rarely think to make their meals!  When Kirsten blogged this recipe, we were smack dab in the middle of Passover, so I put this on the Make Later List.  Later finally came!  The meatballs were so easy to make – I never bake ours and this was so much easier and cleaner than searing.  Marcus was a massive fan of the pan sauce.

Wednesday – Chicken Tikka Masala with Rice and Steamed Broccoli


The Chicken Tikka Masala was a thawed container of leftovers from the freezer, the rice was leftovers, and we steamed the broccoli on Tuesday night so we could just pull it out of the fridge and microwave the whole mess.  Three cheers for leftover meals!
