We cooked so many new recipes this week. Five to be exact. I don’t know what possessed me, but it was fun to have such a variety.
Friday – Chorizo and Sweet Potato Hash
The first time I ate this dish was at Hannah’s wedding, just a little over a year ago. It was just to die for and I remembered it forever. So I was super surprised when she started making this dish for our girls’ brunches. She had the recipe! And it was just as delicious as the first time! After our most recent feast, I demanded that she share the recipe. I ended up actioning it with homemade breakfast sausage for the last night of Passover and even though I don’t think I make it quite as well as she does, it was still pretty darned good.
Monday – Chicken with Indian Spices and Yogurt from How To Cook Everything, Rice, and Roasted Broccoli
I don’t know why I was flipping through How To Cook Everything. I think it had something to do with the fact that there are just so many recipes and so many possibilities. This dish is the one that came up for this week! Once all of the spices were measured, it came together in a snap.
Tuesday – Salmon with Honey Mustard Glaze, Sweet Peas with Red Onion and Mint, and Couscous with Melted Leeks from The Williams-Sonoma Bride & Groom First and Forever Cookbook
Marcus is not a big time salmon eater but I sort of begged him to let us work a few recipes into our rotation here and there. The recipe called for Ritz crackers and hand to God I had some ALDI brand ones hiding in our pantry. I have No Idea where those came from, but it was perfect timing.
The peas were fine, but the couscous with leeks? Stunningly delicious. This is a recipe we will make again.
Wednesday – Chicken with Tarragon, Mustard & Pretzels from The Williams-Sonoma Bride & Groom First and Forever Cookbook, Oven Fries, Steamed Asparagus
I will be honest, pounding chicken breasts into cutlets is not my favorite thing. Even after I have wrapped them in plastic wrap, I still feel like I have to disinfect my kitchen after the fact. But I am not deterred! I continue to pick out recipes that involve cutlets! This chicken dish was actually fairly identical to the salmon dish except with tarragon and pretzel chunks and it was just as delicious.
