Great week at the dinner table this week. Really. Look.
Sunday – Pollo Asado and Buttermilk

It has been a long time since I’ve spent most of Sunday afternoon cooking, and this dinner was a perfect way to fill the time. We’ve had the pollo asado before and it’s a real delight but the marinade is sort of a pain to make. In hindsight, I should have made more of it to freeze, but I’ll just have to make a note for next time.
Marcus has never eaten homemade tortillas, I’ve had them in a few places. After the grilled pizza adventure of summer 2014, I knew that we could handle this. Instead of bacon grease, I just substituted an additional 2 tablespoons of butter. They came out just fine. My next project is to teach Marcus how to roll the tortillas out so that we can start a sort of assembly line.
Tuesday – Korean Keema from Nigella Kitchen with rice and steamed broccoli
The last time we made this dish was in February 2012. So…over three years ago. I had no idea. We have come so far. We actually own gochujang paste instead of cheating with chili garlic sauce. Shockingly/not shockingly, this dinner was just as delicious as I remember.
Thursday – Mexican Chicken Salad with Taco Ranch Dressing from The Williams-Sonoma Bride & Groom First and Forever Cookbook
Clearly this salad has become a favorite, and I am so glad to have it in the rotation!
