It’s Friday, I haven’t been cooking for more than a week now, and the show must go on! When Billy and I were roadtripping across The Great American Southwest, we ate a lot of excellent food.
Billy agreed to take me back to Wiley’s. Wiley’s is a Lubbock BBQ joint constructed out of cinderblocks in the middle of a strip mall parking lot. When we ate there back in 2012, I truly never thought that I would see that place again, but oh my God I am so glad that I did because it is some of the best BBQ I ever had.
There was also some serious Whataburger consumption. If you live in Texas and you haven’t had the Jalapeno Cheddar Breakfast Biscuit, You Must Do This. We had them at the beginning of our roadtrip, and I sourced one before Billy took me back to the airport for my early AM flight. I am borderline embarassed to say that this might be the one thing I really wish we had in Minnesota, but I think that is because we already have some BBQ.
My second first choice would be Blue Bell Christmas Cookie Ice Cream.
While we were in New Mexico, we ate our share of tacos AND BBQ.
And when we returned to Lubbock: Cosmopolitan Oasis, Billy took me to Tortchy’s for some tacos.
