This week, we started to get back into our cooking routine and that was really lovely. We got to try a new (to our kitchen) dinner and I also got to make a few old favorites. A perfect combination.
Sunday – Sesame Chicken with Gingery Greens
Marcus and I discussed the idea of eating dinner salads a few weeks ago and this is the salad I had in mind to lead the charge. When I asked my mom for the recipe, she sent me a photo of the newspaper clipping she took when it was first published – It’s an old recipe from the Star Tribune (2004!) but it is just as delicious today and so simple to prepare.
Tuesday – Asian Chicken Lettuce Wraps
Originally we were supposed to have BBQ chicken sandwiches, but then Marcus got dispatched to a guys’ night. The next best choice for dinner was ANOTHER recipe from the Star Tribune. I always add a diced zucchini to the mix, just to give it an extra veggie kick.
Thursday – Breakfast Tacos from The Homesick Texan
Last year, on New Year’s Day, we actioned a lovely brunch for our overnight guests including Lemon Ricotta Hotcakes and Sausage Bread from Damn Good Food, the Hell’s Kitchen cookbook. While we didn’t even host a party this year, I really liked the idea of having something hot and delicious to eat for breakfast on New Year’s Day so I planned this into our menu without a moment’s hesitation. Who know’s what we’ll feast on next year!
