This week was not a competition, but if it was, in addition to the meals we ate, I also made two pounds of breakfast sausage (for the freezer), a pan of brownies, three pans of rice krispie treats (to be dipped in chocolate and divided for my work cookie exchange), a pan of s’more bars for my parents’ Christmas party, and two skillet cornbreads for our Saturday Hanukkah celebrations.

Sunday – Tomato-Glazed Meatloaves with Brown Butter Mashed Potatoes from The Smitten Kitchen, Garlic Green Beans
I inherited a potato ricer because my mother owned two for reasons even unbeknownst to her and YOU GUYS THIS 100% CHANGED MY POTATO MASHING GAME. My mashed potatoes are now in the big leagues and God it makes me so happy. We don’t make meatloaf often in our house, but I had never tried this Smitten Kitchen recipe before and it was just the best, most cozy Sunday supper. Marcus inhaled it and we’ll be making it again for sure.
Monday – Kimchi Fried Rice, Stir Fried Peapods with Red Pepper and Ginger, Mini Chicken Cilantro Wontons from Trader Joe’s
I was actually supposed to be at a girls’ night, but y’all know plans change and suddenly we had a night in. Kimchi fried rice to the rescue, always. I grabbed the peapods because they were a vegetable we had not put on the menu for the week and it was the best choice of all. We’ll be eating more peapods in the future I am thinking.
Emily came over for dinner and I needed to insert a vegetarian meal into our week, so stacked enchiladas for the win!
Thursday – Chicken Tikka Masala with Rice and Steamed Broccoli
This is one of Marcus’ favorite meals and oddly, we had some chicken breasts in the freezer. This was the logical way to use those up and he was VERY appreciative.
