You guys. Usually we have this issue where we don’t cook enough during the week to have enough leftovers for a week worth of lunches. This week, our fridge was very literally overflowing with food.
Sunday – Asian-Style Barbeque Chicken with Cilantro Lime Rice and Garlic Green Beans
On Sunday morning, my sister-in-law texted about setting-up a family dinner and the next thing you know, she and a cousin were on our doorstep at 5:00 PM! What a cozy beginning to the week.
Monday – Pan-Roasted Chicken Thighs with Potato-Carrot Hash
You guys. There is a gravy here. And that was not supposed to be part of the recipe. So, what happened? I pulled the roasting chicken and our hash from the oven and I looked at the beautiful rendered chicken fat in my cast iron skillet and the roasted vegetables sitting primly and I thought to myself, This will not do! And without even really thinking about it, I found myself tossing 1/4 cup of flour into the chicken fat, browning it up and then adding milk and stirring thoroughly until I had a chicken gravy. Just add thyme, salt and pepper and serve, Amen.
We also had a dinner salad with this meal. Caesar, to be precise. I have been on a massive kick for the stuff lately. I am no stranger to homemade caesar salad dressing, but the particular recipe in How to Cook Everything is just so beyond good that now I want it all the time.
Tuesday – Chicago-Style Hot Dogs with Sandwich Slaw from Dinner: The Playbook and Tater Tots
It was Election Night and we just needed to eat some patriot food, you know?
Wednesday – Chilaquiles in Black Bean Salsa from The Homsick Texan Family Table
We didn’t know we would be having dinner at home this week. And then, here we were. Eating dinner at home. I can truly say that I have never attempted chilaquiles prior to this but I can also now say that we will need to eat these basically all the time. This dinner was unreal.
Thursday – Tater Tot Taco Salad
Mads, Ems and I were getting together and there was only one obvious dinner choice besides cheese curds: Tater Tot Taco Salad. Because it is simply the best and it is the most nutritionally valid way to eat Tater Tots because now they are part of a salad.
