This week I made a meal plan and we succeeded in making one meal from it. I guess there are two lessons there: (1) that we have a well stocked pantry and (2) sometimes you just have to chase your cravings.
Sunday Brunch – Big Breakfast Latkes from The Smitten Kitchen
I cannot for the life of me explain the brunch thing that is transpiring lately. I actually wanted to go out to brunch but the amount of effort it was going to take to put on pants so that a stranger could cook me bacon just seemed…too great. This was an Excellent runner-up.
Sunday – Spicy Chicken Tortilla Soup
It was actually 80 degrees (and we hiked to get ice cream after dinner!) but I really wanted soup. It sounded cozy and rejuvenating and like way less work than actioning anything else.
Monday – Kimchi Fried Rice with Soft-Fried Eggs, Roasted Broccoli and Chicken Cilantro Mini-Wontons from Trader Joe’s
In this week’s round of What Would Dad Like To Eat For Dinner, kimchi fried rice won the face-off. This has been a point of fascination for him for a while now. I really need to write down what all goes into ours because I always end up mixing a number of different recipes into one.
As an aside, if you haven’t ever tried Chicken Cilantro Mini-Wontons from Trader Joe’s, You Absolutely Must. They are so tasty and they are 50 calories for four. It’s ridiculous. They have been living in our freezer consistently since the first Minnesota store opened.
