Tuesday – Tater Tot Taco Salad
Jillian came over for dinner because we had to deal with all of the important things. Since she said that she had a craving for Mexican, I proposed taco salad because it is the best salad that isn’t a salad.
About six months ago, Emily taught me her taco salad secret – add tater tots. They have nothing to do with tacos OR salads, but oh my God it elevates the dish. If you’re raising an eyebrow, just try it. Once. And then share with a friend.
Wednesday – Summer Corn Cakes with Chopped Tomato and Avocado Salsa and Soft-Fried Eggs
Marcus: Is this vegan? Besides the eggs?
Me: No? But it’s vegetarian?
Thursday – Pollo Asado tacos from The Homesick Texan’s Family Table, with Elote
This was supposed to be Not Tacos, but for whatever odd reason, I could not bring myself to make potatoes and tacos sounded really good, so we had those instead.
I know there’s only one taco in the photo, but I pinky swear I ate three.
