Friday Food Round-Up!

Y’all, the way this week panned out, it should have been a Trader Joe’s Chicken Sausage week.  But when I was doing our meal planning, I allowed myself to dream a little bit, because I honestly thought that we we would have More Time.

We didn’t, but we cooked anyway.

Monday – Arroz con Pollo, Mexi-Slaw, and Corn-Tomato-Basil Salad from Dinner a Love Story and Refrigerator Pickles


Mom was out of town and Dad was coming over for dinner.  So on the way home from the cabin (I packed a cookbook), I had Dad pick out what he wanted for dinner.  Since he had never eaten arroz con pollo, he picked that.  Thank God the basis for that dish is browning chicken and putting it in the oven with some rice.

Wednesday – Pork Turkey Dumplings from Dinner A Love Story, Sauteed Zucchini/Asparagus/Broccoli and Kimchi Fried Rice with a Soft Fried Egg


Things that are true about this meal: The first batch of potstickers were completely blackened.  The amount of food produced by this meal would feed four people (including two hungry teenage boys) with leftovers.  The amount of time it took to make this meal (1.5 hours) was WAY TOO MUCH FOR A WEEKNIGHT.

On the bright side, I know that each of these things on their own (potstickers, fried rice) will make for beautiful future meals independently.

  1. We have fried rice on the menu for this week. I am quite excited, except mine will certainly not take 1.5 hours on a weeknight… isn’t that the WORST feeling? You’re 45 minutes in and realize you’re still not going to eat for awhile yet…. big sigh, and for me, bigger glass of wine.
