After last week’s post, I got a call from my mother informing me that she did not raise me to be a hot dog chef. Which is pretty much the truth. She did not. But don’t think I didn’t buy a stash of Trader Joe’s All Beef-No Nitrate Hot Dogs for the freezer. They’ll be ready to heed the call when it comes.
So this week, no hot dogs, but yes to more…mindless stuff.
Sunday – Pulled Chicken Sandwiches from Cooking Light Slow Cooker Tonight!, Vinegar Slaw with Cucumbers and Dill from The Smitten Kitchen Cookbook, Oven Fries and Baked Beans
Originally Marcus was supposed to watch a World Cup match with some friends, but it was raining and then it wasn’t and suddenly he was going to be home for dinner. So I improvised a meal with (mostly) what we had around already and it was wonderful. The chicken filling is technically for sandwiches, and that is 100% how Marcus ate it.
Also, this meal, between the servings we ate for dinner and the leftovers, created six meals, two of them husband-sized.
Wednesday – Garlic Chicken Sausages from Trader Joe’s with Sauteed Apples and Onions, Oven Fries and Garlic Green Beans from Great, Easy Meals
No to hot dogs, yes to more chicken sausages. This week I got fancy by sauteeing up some apples and onions for a little twist. We’re basically gourmet these days.
Thursday – Boyfriend Approved Spicy Black Bean Burgers with Elote and Grilled Asparagus
Thank you, Past Kat, for thinking of me when you threw the four extra (cooked) patties into the freezer. Honestly, I might make a batch of these burgers purely for freezing because they reheated beautifully in the oven.
The corn and the asparagus went on to the grill and that was really the end of the story, so this meal was really a snap to put together at the end of a 9.5 hour work day and 2 hours of commuting. I know I’ve said it before, but it bears repeating: Set Yourself Up For Dinner Success.
