This week, our schedule got away from me. I had completely forgotten that Marcus was out of town one evening, and then, poof! It was Friday. Funny how that happens.
Sunday – Potato-Chorizo Breakfast Tacos from The Homesick Texan’s Family Table with Guacamole
Y’all, times the number of tacos on this plate times three. Through years of taco science, I have come to learn that if you make them all at once, then the tortillas break (especially with corn) and that is just wholly disappointing. So we do not do that anymore.
For the actual dish, instead of chorizo, I used some of the breakfast sausage (Lisa’s recipe as well) that we froze a few weeks ago.
Monday – Hoisin Chicken with Cucumber Salad and Carrots with Chickpeas and Pine Nuts from Great, Easy Meals with White Rice
Most of this is the same song and the same dance. Make some Hoisin Chicken, not actually on the grill, throw together some Cucumber Salad AKA fridge pickles.
I decided to test out this carrot recipe because we had a bag of them in the fridge and I thought it might be nice to use them up. The idea of shredding them into ribbons and then cooking them was a bit perplexing, but Marcus enjoyed the dish. Also, I completely neglected to include pine nuts, because we rarely if ever have them in the house.
