Right now, I am in the stands at Churchill Downs and I’m 100% positive that my mind is on EVERYTHING besides home.
Two weeks ago, not only did I deal with all of the meal planning for this week, I dealt with all of next week’s meal planning as well. Because we all know that vacation is not when you’re going to conjure a menu for the coming week. Once again, Thank You Past Kat.
Sunday – Chicken Korma from Cooking Light Slow Cooker Tonight! with rice and steamed broccoli
On Sunday, I was 1/2 in recovery mode from a bachelorette party and 1/2 foot out the door for a bridal shower when it was time to chuck this into the crockpot.
So I helped Marcus with the mise en place, and then instructed him from the cookbook as he browned and combined everything. Which means that really Marcus made this dinner and I love him for that. The curry was a bit bland the first time around (AKA when we ate it at dinner), but it really perked up when it was reincarnated as leftovers.
Tuesday – Green Chile Hominy Casserole from The Homesick Texan’s Family Table with guacamole
This may rank as one of, if not the most unattractive dinners we have made in the history of our relationship. It is most certainly the greenest dinner we have ever served that wasn’t exclusively composed of lettuce.
The combination of cheese-greek yogurt-jalapenos-poblanos-chorizo built a flavor profile that was just to die for. The hominy provided an interesting texture.
But at the end of the day, the casserole didn’t really set while it was in the oven. I think if I was hoping for something I could serve at a party, I would probably add an egg in order to keep it all together.
