What this week was like…On Sunday I threw a curry in the crockpot because we needed some lunch and we needed a meal in the freezer. Avocado toast made one fine lunch on Tuesday. Marcus was out-of-town for a solid 36 hours.
Some parts of the week? Were really together. Other parts of the week? Were really not.
This dinner was originally supposed to be some sort of sambal chicken with a chimichurri sauce. Sounds great, right?
Except for that part where I didn’t marinate the chicken and by the time I got home from work and wrapped up my run, chimichurri sauce sounded more like my Everest than a condiment I wanted to make from scratch.
Dad was coming over, and I happened to know that this particular meal would be a hit with him. Easy decision.
Thursday – Porcupine Meatballs from Dinner: A Love Story, Garlic Green Beans from Great, Easy Meals and brown rice
Fact: I have never, ever eaten porcupine meatballs prior to this dinner. And for whatever reason, this completely not-so-fancy dish made me inordinately happy.
I feel like this dinner and the variations on it are a world of untapped potential.
